Air Fryer Chicken Meatball Subs

I was determined that we would order out tonight even though I had plans to make this recipe for Air Fryer Chicken Meatball Subs.

Have you ever had just one of those days?!

Like not the worst day ever, but one that makes you tired enough to question your ability to function at home and actually make dinner?!

Well, today was one of those days for me.

However…once I got home I realized if I didn’t make them tonight some of my ingredients would go bad.

So you know how Joey from Friends doesn’t SHARE food…well, Cheri from Cooks Well With Others doesn’t WASTE food đŸ˜‰

Once I turned on the music and had half a glass of wine I was in my cooking zone and enjoying the creative process.

Here’s how to make Air Fryer Chicken Meatball Subs…

Making the meatballs was simple enough…some ground chicken, garlic, bread crumbs, parmesan cheese, an onion (that I sauteed first), an egg and salt and pepper.

All mixed together with my hands, because that’s the only way to do it.

I rolled the meatballs and put them right into the air fryer basket.

They cooked in the air fryer set to 390 degrees for 15 minutes.

And smelled amazing by the way, thanks to the garlic and parmesan cheese!

The sub rolls that I got were Italian Herb and Garlic flavored!

Bonus grocery store finds are the absolute best đŸ™‚

Once the meatballs were cooked to perfection it was time to make the sandwiches.

Fill each sub roll with three meatballs and some tomato sauce.

Then of course the CHEEEESE!

I would say the meatballs were the star, but my husband is a cheese fanatic, so I piled the mozzarella on for him.

Back into the air fryer at 390 degrees for three minutes and we have an ooey gooey cheesy Air Fryer Chicken Meatball Sub that is to die for!

A little sprinkle of parsley over top adds some freshnes and makes them a bit prettier.

But really who cares how they look, how they TASTED was out of this world delicious!

Air Fryer Chicken Meatball Subs

Air Fryer Chicken Meatball Subs are a delicious and easy meatball sub recipe all cooked to yummy perfection in the air fryer!

Ingredients

  • 1 onion diced
  • 1/2 Tbsp olive oil
  • 1 pound ground chicken
  • 1/2 cup Italian bread crumbs
  • 4 cloves minced garlic
  • 1 egg
  • 1/4 cup grated parmesan cheese
  • 1/2 Tbsp kosher salt
  • 1 tsp pepper
  • 1 6 pack sub buns
  • 1 18 oz jar tomato marinara pasta sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Optional: fresh parsley for garnish

Instructions

  1. In a small skillet over medium heat add the olive oil and diced onion. Cook 4-5 minutes.

  2. In a bowl add the cooked onion, ground chicken, bread crumbs, garlic, egg, parmesan cheese, kosher salt, and pepper. Mix together with your hands until evenly combined. Roll 18 meatballs with your hands and place in the air fryer basket.

    Note: Meatballs can be made a day ahead and stored in the fridge until ready to cook.

  3. Set the air fryer to 390 degrees for 15 minutes. Remove the meatballs from the basket and place 3 meatballs in each sub bun.

  4. Spoon some tomato sauce over each sub and top with mozzarella cheese. Place the meatball sub back into the air fryer and set to 390 degrees for 3 minutes or until cheese is melted. Garnish with fresh parsley if desired.

    Note: You may need to air fry the subs in two batches depending on the size of your air fryer.
