Air Fryer Coconut Shrimp is so easy to make with shrimp breaded in panko and coconut flakes and cooked to crispy perfection in the air fryer

Ingredients
  • 1 pound jumbo shrimp peeled and deveined
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 1/2 cup sweetened coconut flakes
  • olive oil cooking spray (I used Pam)
  • 4 oz sweet chili sauce
Instructions
  1. Pat the shrimp dry with paper towels. Crack the egg in a bowl and beat with a fork.

  2. Put the panko and coconut flakes in another bowl and mix until combined.

  3. Dip each shrimp into the egg and then into the panko coconut breading, press the breading slightly so it sticks to the shrimp.

  4. Place the shrimp in the air fryer basket and spray the top with olive oil cooking spray. Set the air fryer to 390 degrees for 15 minutes.

  5. Serve the shrimp with the sweet chili sauce for dipping.
