Smoked Caramelized Onion and Bacon Flatbreads

I did take this recipe to a whole new level of flavor by smoking the onions…yep, Smoked Caramelized Onion and Bacon Flatbreads are now a thing!

My daughter and I have been quite obsessed with caramelized onions ever since I made Slow Cooker Caramelized Onion and Bacon Dip.

So I took inspiration from that fabulous dip and turned it into flatbreads.

This may look like a ton of onions, but as they cook and caramelize they will shrink quite a bit.

Four yellow onions is what I sliced and put in a cast iron skillet.

A good, sharp knife is a must for slicing this many onions.

It will greatly cut down or eliminate the tears that sometimes come with cutting onions.

How to make Smoked Caramelized Onion and Bacon Flatbreads

To the sliced onions I added 4 Tablespoons butter, 3 Tablespoons brown sugar and balsamic vinegar, kosher salt, pepper, and crushed red pepper flakes.

Then onto the smoker set to 275 degrees.

Stir the onions every half hour.

They will take about 3 hours total.

Of course watch them because the time will depend on how thick the onions are sliced.

And also every smoker regulates temperature a little differently.

Now it’s time to make the flatbreads!

I love using the Stonefire Naan flatbreads, but any cooked flatbread would work.

Naan Bread

To make the 4 flatbreads, brush each with olive oil and top them with the caramelized onions first.

Next pile on the mozzarella cheese, blue cheese crumbles, and cooked and crumbled bacon.

For cooking these you’ll have two options.

I have a Traeger smoker and I can easily crank the heat up to 375 to cook them for 12 to 14 minutes.

If you have a different brand of smoker that you can’t easily raise the heat I suggest cooking them in the oven, still at 375 for 12 to 14 minutes.

Super flavorful… the smoked flavor from the sweet onions went perfectly with the ooey gooey cheeses and saltiness from the bacon!

Ingredients

  • 4 onions (I used yellow onions)
  • 4 Tbsps butter
  • 3 Tbsps brown sugar
  • 3 Tbsps balsamic vinegar
  • kosher salt, pepper, crushed red pepper flakes
  • 4 Stonefire Naan flatbreads
  • 1 Tbsp olive oil
  • 4 cups shredded mozzarella cheese
  • 4 oz crumbled blue cheese
  • 1 pound bacon cooked and crumbled

Instructions

  1. Slice the onions and put them in a cast iron skillet or foil pan. Add the butter, brown sugar, balsamic vinegar, kosher salt, pepper, and crushed red pepper flakes.

  2. Put the skillet on the smoker set to 275 degrees for about 3 hours. Stir it every half hour.

    Note: Cook time will depend on thickness of onion slices and smoker temp, they may be ready before the 3 hour mark or they may take a little longer.

  3. When ready to make the flatbreads brush the Naan breads with olive oil. Spread the smoked caramelized onions evenly over each one, add the mozzarella cheese, blue cheese, and crumbled bacon evenly over each flatbread.

  4. Cook according to one of these methods:

    Traeger smoker: Set the Traeger to 375 degrees and cook the flatbreads for 12 to 14 minutes.

    Oven: Preheat the oven to 375 degrees and cook the flatbreads 12 to 14 minutes.
