Harissa Chicken Cauliflower Rice Bowls
Harissa Chicken Cauliflower Rice Bowls are a very healthy recipe packed full of unique flavors and spice 🙂
Harissa chili spread is a blend of peppers and Moroccan spices.
It adds amazing flavor and a little spicy kick to any dish.
These are the ingredients you’ll need for the chicken part of this dish.
How to make Harissa Chicken Cauliflower Rice Bowls
The first step is dicing a red bell pepper, yellow bell pepper, and an onion.
Then set a large skillet over medium heat and some olive oil.
Once the oil is hot add the peppers and onion and cook for a few minutes.
Next scoot the peppers and onions to one side of the skillet, and add the ground chicken to the empty side.
Also add at this time soy sauce, honey, Harissa spread, garlic, cumin, and cinnamon.
Cook this for about 8 more minutes, breaking apart the chicken as it cooks.
The cinnamon and Harissa together smells like pure heaven in your kitchen!
As the chicken and veggies were cooking, I microwaved two bags of cauliflower rice.
I also mixed together a container of nonfat plain Greek yogurt with more Harissa and soy sauce.
This sauce will be drizzled over top and ties the whole dish together.
If you don’t prefer yogurt, you can use mayo instead for the sauce.
To make the bowls, divide the cauliflower rice among 4 plates or bowls.
Then top each with the Harissa chicken.
And a drizzle of the Harissa yogurt sauce and fresh parsley.
Oh my goodness…SO pretty!
And Harissa Chicken Cauliflower Rice Bowls are even more delicious than they are gorgeous 🙂
Bonus points for a super healthy meal that tastes like a cheat day meal!
Of course you could substitute regular rice for the cauliflower rice if you prefer.
Or even Sweet Potato Rice would be amazing!
