Chicken Plantain Rice Bowls
One of my recently recreated recipes are these Chicken Plantain Rice Bowls.
I took my kids to Universal Studios a few months ago, and still am attempting to recreate some of the amazing food we had there.
Of course I am using my easy home cook shortcuts like any busy mom does.
The Ben’s Ready Rice in the pouches are a huge time save, microwave right in the pouch for 90 seconds and the rice is done 🙂
Store bought plantain chips instead of making them myself, which is great for a restaurant, but quite the task for making at home.
Also using these already seasoned black beans for another home cook time saving trick.
How to Make Chicken Plantain Rice Bowls
So with using all of these convenient ingredients, putting this bowls together takes no time at all 🙂
After microwaving the Spanish rice, divide them between 4 bowls.
Then warm up the corn, black beans, and cooked, shredded chicken.
I keep Simple Shredded Chicken for Meal Prepping on hand in the fridge, or you can buy a store bought rotisserie chicken and shred that.
All that’s left to do now is assembling the Chicken Plantain Rice Bowls 🙂
Or you could just set out the ingredients and everyone can build their own just the way they like it.
Mine had the warmed chicken , corn, black beans and also cheese, salsa, sour cream, cilantro, and of course the fabulous plantain chips for that added crunch.
And you know me and my addiction to spice, so hot sauce was involved as well 😉

Chicken Plantain Rice Bowls
Chicken Plantain Rice Bowls are easy to make by combining Spanish rice with chicken, corn, black beans, and any other topping you like
Ingredients
- 3 Uncle Ben's Spanish Rice microwave pouches (or 4 cups cooked Spanish rice)
- 2 cups cooked, shredded chicken
- 1 14 oz can corn drained
- 1 14 oz can black beans (I used Bush's taco fiesta flavored)
- 1 1/2 cups shredded cheese of choice
- 1 5 oz bag plantain chips
- Other toppings of choice such as sour cream, salsa, lime wedge, hot sauce and cilantro
Instructions

Cook the Spanish rice according to package directions (mine microwaved for 90 seconds per pouch).

Warm up the chicken, corn, and black beans either in a microwave or in skillets/ saucepans.

Divide the rice evenly between 4 bowls and top each with the chicken, corn, black beans, cheese, plantain chips and other toppings such as sour cream, salsa, lime, hot sauce and cilantro.
