I feel weird even calling this an actual recipe, you guys. Maybe Chicken Fried Rice Salad is more of a genius way to use leftover fried rice and one of the easiest dinner ideas ever rather than an actual recipe. Sound good?
We make this Hibachi Chicken Fried Rice and homemade yum yum sauce often.
But you could use any leftover restaurant rice and they have many choices for store bought yum yum sauce.
I actually made extra on purpose so we would have the leftovers.
Cook once, eat twice is the equivalent of work smarter, not harder 😉

How to Make Chicken Fried Rice Salad
So not only am I using leftover rice, I am making my life even easier by using an Asian salad kit from the store.
Warm the rice slightly, like just enough to where it’s room temperature-ish.

For the salad, put it in a bowl and add the dressing that comes in the kit.
These kits are a lifesaver when it comes to extra busy evenings.

Toss until the dressing is evenly coated.
Using tongs makes this very easy.

And divide the salad between 2 plates or bowls.
If you’re feeding more than 2 people just double this.

Top each salad with the rice and the wonton topping that comes with the salad kit.
That wonton and almond topping may be my favorite part, gives the perfect crunch factor.

Then top Chicken Fried Rice Salad with yum yum sauce!
Dinner is ready in minutes with this salad idea. Mix everything up and enjoy 🙂

Chicken Fried Rice Salad
Chicken Fried Rice Salad is the perfect way to use leftover fried rice, a super quick and easy dinner that use a salad kit from the store
Ingredients
- 1 13 oz Asian salad kit (produce section of grocery store)
- 2 cups leftover chicken fried rice
- 2 oz yum yum sauce
Instructions

Put the chopped salad in a large bowl and add the salad dressing that comes with the kit. Toss until combined and divide the salad between 2 plates or bowls.

Warm the leftover chicken fried rice slightly, I aimed for room temp. Top each salad with the rice and the crispy wontons that come with the salad kit.

Drizzle the yum yum sauce over the rice before serving.
