
Hibachi Chicken Fried Rice
What my baby girl was craving most from momma’s home cooking was my Hibachi Chicken Fried Rice recipe.
My third daughter is now away at college, and she knows the drill from her sisters.
When you come home for a visit you get to pick a special homecoming meal.
Well baby girl, if that’s what you want, that’s what you shall have!
Bonus that she even wanted to make it with me 🙂
The key to success when making hibachi is making sure you have everything prepped and ready to go.
Being a planner is a must here 🙂
Here is how to make Hibachi Chicken Fried Rice
We had 6 cups of cooked and cooled Jasmine rice.
Cooling the rice helps it to crisp instead of being mushy.
Also sesame oil, diced chicken, a diced onion, eggs, a bag of frozen peas and carrots, soy sauce, lemon juice, garlic, kosher salt, pepper, butter, and sesame seeds.
We put all of our ingredients on trays and headed out to the flat top grill.

Preheat the Blackstone griddle or flat top grill to medium high for a few minutes.
Then add sesame oil and spread it evenly with hibachi spatulas.
Then add the rice, eggs, and onion and mix and flip with the spatulas for a few minutes.

And add the bag of peas and carrots, and continue mixing and flipping.

She’s a pretty cute mixer and flipper in my opinion!

Next add the soy sauce, butter, garlic, sesame seeds, kosher salt, and pepper.
And…you guessed it…more mixing and flipping.

After a few minutes, move the rice to one side of the grill.
And add more sesame oil and the diced chicken along with soy sauce and fresh lemon juice.
The chicken will cook by itself (you guessed it, more flipping) for 5 minutes or so.
Then mix it all together with the rice.

Enjoy your Hibachi Chicken Fried Rice with some homemade Yum Yum Sauce!
You can make the sauce by combining mayo, ketchup, sugar, paprika, and garlic powder.

It really makes this whole dish taste just like Benihana!

Hibachi Chicken Fried Rice
Hibachi Chicken Fried Rice made on the flat top grill is very similar to Benihana fried rice and even has a homemade yum yum sauce!
Ingredients
Yum Yum Sauce
- 3/4 cup mayo
- 1/4 cup ketchup
- 1 Tbsp sugar
- 1 tsp paprika
- 1 tsp garlic powder
Hibachi Fried Rice
- 2 Tbsps sesame or vegetable oil
- 6 cups cooked Jasmine rice cooled
- 1 onion diced
- 3 eggs
- 1 12 oz bag frozen peas and carrots thawed
- 1/2 cup soy sauce
- 3 Tbsps butter
- 4 cloves garlic minced
- 1 Tbsp sesame seeds
- kosher salt, pepper
Chicken
- 1 Tbsp sesame or vegetable oil
- 1 1/2 pounds chicken breasts cut into bite size pieces
- 1 Tbsp soy sauce
- 1 Tbsp lemon juice
Instructions
Yum Yum Sauce

Add the mayo, ketchup, sugar, paprika, and garlic powder in a bowl and whisk until evenly mixed.
Hibachi Fried Rice

Heat the flat top griddle or hibachi grill to medium high heat for at least 5 minutes.

Add the sesame oil and spread with hibachi spatula, add the rice, onion, and eggs. Cook 2 minutes and mix together with hibachi spatulas.

Add the peas and carrots and cook 1 minute, mixing those together with the rice.

Add the soy sauce, butter, garlic, sesame seeds, and a small amount of kosher salt and pepper. Mix together and cook for 6 to 7 minutes, flipping the rice over occasionally.
Chicken
-
During the last 2 minutes of the rice cooking, move the rice to the side to make room for the chicken. Add the oil directly on the flat top and add the chicken, soy sauce, and lemon juice. Cook 4 to 5 minutes, flipping a few times and mix the chicken together with the rice.
Serve the chicken fried rice with the Yum Yum Sauce.
