This Prep Ahead Weekly Meal Plan depends on this Simple Shredded Chicken for Meal Prep. On Sunday (or any day early in the week) make a TON of this chicken and store in the fridge.
You will use it in every meal this week, making dinnertime fast and easy.
The first meal of the week is by far the most healthy, but it’s also big on flavor. Chicken salad made with avocado instead of mayo and by adding the mango makes it very unique.
Since the chicken is already cooked, this one takes just a few minutes to throw together. Then the rest of the work is done in the oven.
I would recommend cooking the potatoes ahead of time to make this one go even faster. This is comfort food at it’s best!
