These Peanut Chicken Salad Wraps are refreshing, gorgeous, and of course filled with yumminess.

I love a good no-cook meal in the summer.

Especially one filled with crisp, fresh veggies and has a good crunch factor too!

It’s technically a no-cook meal because the chicken I am using was leftover from our dinner two nights ago.

I made extra Wasabi Ginger Grilled Chicken on purpose so we could use it in this dinner.

Making Peanut Chicken Lettuce Wraps

Since the chicken was already cooked, this literally took me less than 15 minutes and dinner was on the table.

First add a bag of broccoli slaw to a large bowl along with sliced red pepper, chopped cilantro, sliced green onions, peanuts, and the diced chicken.

Then make the sauce in a separate bowl.

Just whisk together sweet chili sauce, soy sauce, and peanut butter.

Be patient with the sauce, because of the peanut butter it takes at least a minute, maybe two, until it’s evenly mixed.

Next toss the sauce with the veggies and chicken.

You’ll need large flour tortillas and large lettuce leaves for the wraps.

I like to put down two lettuce leaves first.

Then pile on the goodness!

Oh yes, these are BIG wraps!

Peanut Chicken Salad Wraps

You could drizzle on some Sriracha and more chopped peanuts if you like, that’s the way I enjoyed mine.

Peanut Chicken Salad Wraps are oh so tasty and pretty, plus more on the healthy side too!

They would also be great without the flour tortillas and just served in lettuce wraps for an even healthier version.

Peanut Chicken Salad Wraps

Peanut Chicken Salad Wraps are big on flavor with the combo of slaw, cilantro, chopped peanuts, and chicken in a sweet and spicy peanut sauce!

Ingredients

  • 2 cups cooked, chopped chicken
  • 1 8 oz bag broccoli slaw or coleslaw
  • 1 red bell pepper sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup chopped peanuts
  • 1/3 cup sweet chili sauce
  • 3 Tbsps soy sauce
  • 3 Tbsps peanut butter
  • 4 large flour tortillas
  • 8 large lettuce leaves (I used boston lettuce leaves)
  • Optional: Sriracha and more chopped peanuts

Instructions

  1. Put the cooked chicken, slaw, bell pepper, cilantro, green onions, and peanuts in a large bowl.

  2. In a separate bowl add the sweet chili sauce, soy sauce, and peanut butter and whisk until evenly mixed.

    Note: This will take about 1 to 2 minutes until evenly mixed.

  3. Pour this sauce into the bowl with the other ingredients and toss until evenly combined.

  4. Lay the tortillas flat and put 2 large lettuce leaves in the center of each. Top each with the peanut chicken salad and roll into a wrap.

  5. Drizzle with Sriracha and top with more chopped peanuts if desired.
