Peanut Chicken Salad Wraps are big on flavor with the combo of slaw, cilantro, chopped peanuts, and chicken in a sweet and spicy peanut sauce!

Ingredients
  • 2 cups cooked, chopped chicken
  • 1 8 oz bag broccoli slaw or coleslaw
  • 1 red bell pepper sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup sliced green onions
  • 1/4 cup chopped peanuts
  • 1/3 cup sweet chili sauce
  • 3 Tbsps soy sauce
  • 3 Tbsps peanut butter
  • 4 large flour tortillas
  • 8 large lettuce leaves (I used boston lettuce leaves)
  • Optional: Sriracha and more chopped peanuts
Instructions
  1. Put the cooked chicken, slaw, bell pepper, cilantro, green onions, and peanuts in a large bowl.

  2. In a separate bowl add the sweet chili sauce, soy sauce, and peanut butter and whisk until evenly mixed.

    Note: This will take about 1 to 2 minutes until evenly mixed.

  3. Pour this sauce into the bowl with the other ingredients and toss until evenly combined.

  4. Lay the tortillas flat and put 2 large lettuce leaves in the center of each. Top each with the peanut chicken salad and roll into a wrap.

  5. Drizzle with Sriracha and top with more chopped peanuts if desired.
