Baked Cap’n Crunch Chicken
To add a little sweetness to dinnertime I thought I’d give Baked Cap’n Crunch Chicken recipe a try.
A very popular and easy dinner at our house is Baked Cornflake Crusted Chicken.
My son calls it “cereal chicken”, so that got me thinking about other cereals that I could use as breading.
SO GOOD!!!
That was the inspiration for this winner winner chicken dinner đŸ™‚
How to Make Baked Cap’n Crunch Chicken
When I bread something and bake it I usually use my baking rack on top of a baking sheet lined with parchment paper or foil (easy clean up…momma ain’t no fool).
If you don’t have a wire baking rack putting the chicken directly onto a lined baking sheet would be perfectly fine.
My son was in the kitchen when I got out the Cap’n Crunch cereal so we snacked on it a bit before putting it in the food processor to make the crumbs.
He called it our appetizer đŸ™‚
If you don’t have a food processor put it into a gallon size plastic baggie and smash the heck out of it until it becomes like breadcrumbs.
You could do nuggets or bite size pieces, I cut mine into strips.
I cut each chicken breast into 5 strips and seasoned them with kosher salt and pepper.
(I will say, I liked the thinner chicken strips a little better than the thicker ones because there was more of the crunchy, sweet breading-to-chicken ratio…
Obviously the breading is the best part of this dish so thinner chicken strips=more crunchy yumminess đŸ™‚ )
Make sure your oven is preheated because you’ll want to bake them as soon as you’re done breading.
I would imagine the cereal would get soggy if it sat around.
Beat an egg in a bowl, dip each piece of chicken into the egg and then into a bowl with the cereal crumbs.
Press the Cap’n Crunch into the chicken and place on the lined baking sheet.
Sprinkle with a little more kosher salt and pepper.
Bake for 15 minutes in a 450 degree oven.
I served Baked Cap’n Crunch Chicken with honey mustard on the side.
My daughter dipped hers in ranch (she basically dips everything in ranch).
I’m usually very saucy, but honestly with this dish I loved it better just plain.
It had a perfect sweet and salty flavor, and the crunch was pretty darn good for being baked.
An easy dinner that everyone in my family loved = mom win đŸ™‚

Baked Cap’n Crunch Chicken
Chicken tenders coated with Cap'n Crunch and baked until crisp
Ingredients
- 2 cups Cap’n Crunch cereal
- 1 pound chicken breasts
- kosher salt and pepper
- 1 egg
- Optional: honey mustard
Instructions

Put the cereal into a food processor, pulse until it looks like breadcrumbs. Put in a bowl.

Cut chicken into thin strips or bite size nuggets. Season with kosher salt and pepper.

Beat the egg in a bowl.

Preheat the oven to 450 degrees. Line a baking sheet with parchment paper or foil. (Use a wire baking rack over top of the baking sheet if you have one).

Dip each piece of chicken into the egg, then into the cereal crumbs. Press the crumbs into the chicken and place on the baking sheet. Top with more cereal crumbs if some are leftover and sprinkle with more kosher salt and pepper.

Bake for 15 minutes at 450 degrees. Serve with honey mustard if desired.
