Cheesy Smashed Potatoes
Cheesy Smashed Potatoes were a huge side dish recipe hit with the fam!
Potatoes are something that everyone in my family loves, so I make them quite often.
I’ve gotten a little bored with them lately, so I prepared them a little differently tonight.
My son even called them potato cookies (which I guess they do kinda resemble cookies a bit).
How to Make Cheesy Smashed Potatoes
I got the petite red potatoes for this dish.
You could use the regular size red potatoes, just increase the cooking times.
I boiled the potatoes in salted water for 12 minutes (regular red potatoes boil for 18 minutes).
Once drained from the water I put them onto a lined baking sheet.
This was the fun part…smashing them!
I used a mason jar and just smashed them by pressing down.
They break apart pretty easily.
Drizzle a little olive oil on each one and sprinkle with kosher salt, pepper, and crushed red pepper if you want a little heat.
Into a 450 degree oven for 15-18 minutes (depending on how brown and crispy you want them).
Remove from the oven once they are crispity and golden brown and sprinkle with some shredded italian blend cheese and fresh thyme.
Back into the oven for another 2 minutes just to melt the cheese.
Serve these Smashed Potatoes with just about any main dish, we had ours with steak…because who doesn’t love steak and potatoes?!
Especially when they are extra crispy and topped with melty cheese đŸ™‚

Cheesy Smashed Potatoes
A fun and cheesy side dish, super crisp on the outside and very flavorful!
Ingredients
- 1 pound petite red potatoes
- olive oil, kosher salt, pepper, crushed red pepper flakes
- 1 cup shredded italian blend cheese
- fresh thyme
Instructions

Fill a saucepan with water, bring to a boil, salt the water with kosher salt and add potatoes. Boil for 12 minutes (if they are regular size potatoes and not petite, boil for 18 minutes).

Drain potatoes and place on a lined baking sheet. Smash with a cup or mason jar. Drizzle each potato with olive oil and sprinkle with kosher salt, pepper, and crushed red pepper flakes (if you like a little heat).

Bake in a 450 degree oven for 15-18 minutes. Remove from oven, add cheese and fresh thyme and bake for an additional 2 minutes.
