Cheesy Ranch Potatoes
Cheesy Ranch Potatoes are a perfect comfort food side dish recipe and one of life’s simple pleasures.
It’s a magical combination of flavors that go together like peas and carrots!
(only WAY more amazing because, well, there’s cheese…and ranch…and potatoes!).
This dish is perfect for feeding a crowd… it’s easy, inexpensive, and who doesn’t LOVE cheese with anything?!
How to Make Cheesy Ranch Potatoes
Start with about 2 pounds of redskin potatoes, dice them up into small pieces and right into a 9×13 dish.
I made life easier by using one of those throw away foil pans.
I love to cook, but not such a fan of washing dishes 🙂
Season them with a packet of dry ranch seasoning, kosher salt, and pepper.
Give it a toss to coat everything, then add some ranch dressing and toss that around as well.
Cover with foil and bake for 45 minutes in a 425 degree oven.
I did stir them every 15 minutes or so.
After 45 minutes give them a taste.
I cut mine into fairly small pieces, so 45 minutes was perfect, but if your potatoes are bigger it may take a few more minutes.
Stir in a cup of cheese and sprinkle another cup of cheese over top.
Cheese just makes everything better in my opinion.
Put Cheesy Ranch Potatoes back into the oven for 5 minutes and it’s ooey gooey cheesy deliciousness!

Cheesy Ranch Potatoes
An easy and cheesy side that everyone will love!
Ingredients
- 2 pounds redskin potatoes
- 1 packet dry ranch seasoning
- kosher salt, pepper
- 6 oz ranch dressing
- 2 cups shredded cheese (cheddar or colby jack)
Instructions

Dice potatoes into small pieces. Place in a 9×13 baking dish.

Sprinkle the dry ranch seasoning, kosher salt, and pepper on the potatoes and toss to coat evenly. Pour the ranch dressing on top and toss again to coat evenly.

Cover with foil and bake for 45 minutes to 1 hour in a 425 degree oven. Stir every 15 minutes. (Taste to make sure they are fully cooked, depending on the size of the pieces, it may require more baking time)

Remove foil, add 1 cup of the cheese and mix into the potatoes. Sprinkle the other cup of cheese over top. Bake 5 additional minutes or until cheese is melted.
