These petite gold potatoes are what I used to make this insanely yummy dish, but petite redskin potatoes work just as well.
How to Make Crispy Garlic Parmesan Potatoes
Simply slice the petite potatoes in half and put them in a bowl.
Then toss them with olive oil, parmesan cheese, garlic, Italian seasoning, kosher salt and pepper.
Adding crushed red pepper flakes would also be a great addition if you wanted to add a little spice.
Next line a baking sheet with parchment paper or foil.
And sprinkle an even layer of grated parmesan cheese.
This cheesy layer is what will create that cheesy, crispy crust on the potatoes.
Place the potatoes cut side down right on top of the grated parmesan cheese on the baking sheet.
Bake the potatoes in a 425 degree oven for 30 minutes.
No need to flip them or mess with them at all.
When they are ready you’ll see this gorgeous golden brown cheesy goodness!

Crispy Garlic Parmesan Potatoes
Crispy Garlic Parmesan Potatoes are a delicious side dish, flavored with garlic and parmesan and baked to crispy perfection in the oven!
- 1 1/2 pounds petite golden potatoes (or petite redskin potatoes)
- 2 Tbsps olive oil
- 1/2 cup grated parmesan cheese
- 1 1/2 Tbsps garlic paste or fresh minced garlic
- 1 Tbsp Italian seasoning
- kosher salt, pepper
Slice the petite potatoes in half and put them in a bowl.
Add the olive oil, 1/4 cup of the parmesan cheese, garlic, Italian seasoning, kosher salt, and pepper. Toss until evenly mixed.
Line a baking sheet with foil or parchment paper. Evenly sprinkle the remaining 1/4 cup grated parmesan on the baking sheet.
Place the potatoes cut side down on top of the parmesan in a single layer.
Bake in a 425 degree oven for 30 minutes.
