Ingredients
  • 1 1/2 pounds petite golden potatoes (or petite redskin potatoes)
  • 2 Tbsps olive oil
  • 1/2 cup grated parmesan cheese
  • 1 1/2 Tbsps garlic paste or fresh minced garlic
  • 1 Tbsp Italian seasoning
  • kosher salt, pepper
Instructions
  1. Slice the petite potatoes in half and put them in a bowl.

  2. Add the olive oil, 1/4 cup of the parmesan cheese, garlic, Italian seasoning, kosher salt, and pepper. Toss until evenly mixed.

  3. Line a baking sheet with foil or parchment paper. Evenly sprinkle the remaining 1/4 cup grated parmesan on the baking sheet.

  4. Place the potatoes cut side down on top of the parmesan in a single layer.

  5. Bake in a 425 degree oven for 30 minutes.
