Possibilities for grilled chicken recipes are endless, and this one is pretty healthy and low carb/ Keto friendly.

It’s always nice to mix it up with different toppings, sauces, and flavors.

How to make Grilled Chicken with Guacamole and Bacon

The seasoning for this chicken has a southwest flavor with paprika, chili powder, garlic powder, and cumin.

Along with kosher salt and pepper of course.

If you wanted to add some spiciness sprinkle some red pepper flakes as well.

These are thin cut chicken breasts, so only about 3-4 minutes per side on the grill over medium heat.

I made an outrageously yummy Smoked Poblano Guacamole for this dish.

I pinky promise it didn’t take too much effort, but it did take some time for the peppers to smoke.

You could make your own guacamole or use store bought guacamole to make it even more simple and easy.

Top each grilled chicken breast with guacamole and cooked bacon crumbles.

I don’t know how it is in your house, but here I have to hide my bacon crumbles from my family.

They think maybe I made an appetizer or snack every time I make bacon 😉

Ingredients

  • 4 thin cut chicken breasts
  • 1 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp cumin
  • kosher salt, pepper to taste
  • 1 cup guacamole (store bought or homemade, see recipe in post above for Smoked Poblano Guacamole)
  • 8 slices bacon cooked and crumbled
  • Optional: cotija cheese crumbles

Instructions

  1. Brush the chicken on both sides with olive oil. Sprinkle evenly with paprika, chili powder, garlic powder, cumin, kosher salt, and pepper.

  2. Grill over medium to medium high heat for 3-4 minutes per side.

  3. Top each chicken breast with 1/4 cup guacamole, cooked bacon bits, and cotija cheese if using.
