Ingredients
  • 4 thin cut chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • kosher salt, pepper to taste
  • 1 cup guacamole (store bought or homemade, see recipe in post above for Smoked Poblano Guacamole)
  • 8 slices bacon cooked and crumbled
  • Optional: cotija cheese crumbles
Instructions
  1. Brush the chicken on both sides with olive oil. Sprinkle evenly with paprika, chili powder, garlic powder, cumin, kosher salt, and pepper.

  2. Preheat your grill or Blackstone griddle to medium heat. Cook for 3-4 minutes per side. Add cooking oil first is using your griddle.

  3. Top each chicken breast with 1/4 cup guacamole, cooked bacon bits, and cotija cheese if using.
