Well, the secret trick isn’t that exciting I guess…but it does work!
If you’re a chicken skin junkie like my husband you’ll be super interested to know that baking powder helps to crisp it to perfection!
How to Make Crispy Baked Cajun Chicken Thighs
Pat the chicken thighs dry with paper towels.
And sprinkle with a mixture of cajun seasoning and baking powder and rub into the chicken.
The store brand cajun seasoning is what I used, any favorite cajun seasoning would be perfect I’m sure.
Then place on a wire rack on a lined baking sheet.
If you don’t have a wire rack it’s alright, just onto a baking sheet will be just fine.

For the first 15 minutes of cooking set the oven to 475 degrees (yes, this is also part of the crispy skin trick).
Then for the remaining 30 minutes of cooking set the oven to 425 degrees.
You will actually hear the skin crackling as it bakes in the oven!
And oh…my…word Crispy Baked Cajun Chicken Thighs smell so amazing!
It comes out baked to perfection and with the crispiest skin you can get from baking it 🙂
I think the hardest part is waiting for them to cool down enough to be able to devour them.
I’ve never tried this secret trick on chicken legs, wings, or split breasts…but I’m pretty sure it would be just as crispy as on the thighs 🙂

Crispy Baked Cajun Chicken Thighs
A secret trick to getting the crispiest baked chicken
- 2 pounds chicken thighs (4-6 thighs)
- 1 1/2 Tbsps cajun seasoning (plus more to sprinkle over top)
- 1 tsp baking powder
Pat both sides of the chicken thighs dry with paper towels.
Note: If you prefer less skin, trim the excess skin on the bottom of each thigh using kitchen scissors leaving just the skin on the top.
Combine the cajun seasoning and baking powder. Rub on both sides of the chicken thighs. Sprinkle more cajun seasoning over top if desired.
Place the chicken skin side up on a wire rack over a lined baking sheet. Put in a 475 degree oven for 15 minutes. Reduce the oven temp to 425 and cook for an additional 30 minutes.
