Salmon with Avocado and Pomegranate
Salmon with Avocado and Pomegranate is unique, insanely delicious, and an absolutely gorgeous dinner idea!
This recipe was inspired by a recent vacation where I had pomegranate guacamole… like whaaaattt?!
Who knew such an incredible combo existed.
I decided to recreate the guac and top it on salmon that hits every layer of flavor… savory, sweet, a hint of spice, and pop of acidity in every bite.
How to make Salmon with Avocado and Pomegranate
First, we will make the honey lime glaze for the salmon.
Put some honey, lime juice, chili powder, pinch of cayenne pepper, kosher salt, and pepper into a small bowl.
And whisk until combined.
Then place four salmon fillets on a lined baking sheet.
And brush the glaze over the salmon.
Next stop is a 400-degree oven for the salmon.
It will cook for 10 to 12 minutes, depending on the size and thickness.
While the salmon is baking, let’s make the pomegranate guacamole (which is also amazing served with chips for dipping).
Simply put a large avocado into a bowl with more lime juice, chopped cilantro, another pinch of cayenne, kosher salt, and pepper.
Mash this with a fork leaving it somewhat chunky.
Then stir in some pomegranate seeds.
Once the salmon is perfectly cooked, top each piece with the guac.
And garnish with more cilantro and pomegranate seeds.

Salmon with Avocado and Pomegranate
Salmon with Avocado and Pomegranate is a healthy dinner recipe packed with superfoods and so much flavor and very festive colors!
Ingredients
- 1 1/2 tablespoons honey
- 1 1/2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 pinch cayenne pepper
- kosher salt, pepper
- 4 salmon fillets
- 1 large avocado (or 2 small avocados)
- 1/3 cup chopped fresh cilantro
- 4 ounces pomegranate seeds
Instructions

Put the honey, 1 tablespoon of the lime juice, chili powder, cayenne pepper, kosher salt, and pepper in a small bowl and whisk until combined.

Place the salmon on a lined baking sheet and brush this mixture over the salmon. Bake in a 400-degree oven for 10 to 12 minutes.

Cut the avocado in half, remove the pit, and scoop the avocado into a bowl. Add remaining lime juice, most of the cilantro, a little cayenne pepper, kosher salt, and pepper. Mash together with a fork and stir in most of the pomegranate seeds.

Serve the salmon with the mashed avocado over top and sprinkle remaining pomegranate seeds and cilantro over top.
