Ingredients
  • 1 1/2 tablespoons honey
  • 1 1/2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 pinch cayenne pepper
  • kosher salt, pepper
  • 4 salmon fillets
  • 1 large avocado (or 2 small avocados)
  • 1/3 cup chopped fresh cilantro
  • 4 ounces pomegranate seeds
Instructions
  1. Put the honey, 1 tablespoon of the lime juice, chili powder, cayenne pepper, kosher salt, and pepper in a small bowl and whisk until combined.

  2. Place the salmon on a lined baking sheet and brush this mixture over the salmon. Bake in a 400-degree oven for 10 to 12 minutes.

  3. Cut the avocado in half, remove the pit, and scoop the avocado into a bowl. Add remaining lime juice, most of the cilantro, a little cayenne pepper, kosher salt, and pepper. Mash together with a fork and stir in most of the pomegranate seeds.

  4. Serve the salmon with the mashed avocado over top and sprinkle remaining pomegranate seeds and cilantro over top.
