Air Fryer Chorizo Goat Cheese Jalapeno Poppers

Air Fryer Goat Cheese Jalapeno Poppers with chorizo sausage… do snack recipes really get any better than this?!

I am equally in love with both chorizo and goat cheese, so stuffing this mixture in a jalapeno sounded like a great idea!

Air Fryer Chorizo Goat Cheese Jalapeno Poppers were part of our snacky-snack Friday dinner actually.

It’s no fun making a complete meal on the weekends, we like to make a bunch of appetizers to welcome those weekend vibes 🙂

To make these poppers, first put a pound of ground chorizo sausage in a skillet over medium heat.

Cook that for a few minutes, breaking it apart as it cooks.

Drain the excess grease from the chorizo once it’s cooked. And set the heat to low.

Then add in 8 oz of goat cheese. I got the spreadable kind like this (they only came in 4 oz logs so I added two).

And also a cup of shredded cheddar cheese, kosher salt, and pepper.

Mix this together for a few minutes over low heat until it’s all melted together.

It does take a few minutes, but I pinky promise it will 🙂

As the chorizo and goat cheese mixture cools, prepare the jalapeno peppers for stuffing.

I recommend wearing gloves for this, my skin is super sensitive to jalapenos.

Cut each in half lengthwise and scrape out the seeds and white ribs with a spoon.

Or leave a few seeds for some extra heat if preferred.

Next stuffed them really full with that scrumptious chorizo and goat cheese mixture.

I had just a tad bit of the filling left and it was super yummy with tortilla chips!

Put the peppers in the air fryer in a single layer.

You will most likely have to make these in two batches unless you have a really big air fryer.

Set the air fryer to 370 degrees for 8 to 10 minutes, depending on how well you want the jalapenos cooked.

And the jalapenos themselves still have a slight crunch and don’t get mushy.

As you can see, the top of the filling gets a gorgeous golden brown crust, which is quite possibly my favorite part.

Ingredients

  • 1 pound ground chorizo sausage
  • 8 oz goat cheese
  • 1 cup shredded cheddar cheese
  • kosher salt, pepper
  • 10 to 12 jalapeno peppers

Instructions

  1. Set a skillet over medium heat and add the chorizo sausage. Cook 5 to 6 minutes, breaking it apart as it cooks. Drain excess grease and reduce the heat to low.

  2. Add the goat cheese, shredded cheddar cheese, kosher salt, and pepper to the skillet with the sausage. Cook on low 2 to 3 minutes, stirring until it is evenly combined.

  3. As the chorizo and cheese mixture cools, slice the jalapenos in half lengthwise and scrape the seeds and white ribs off with a metal spoon.

  4. Stuff the chorizo cheese mixture into each jalapeno and place them stuffed side up in the air fryer basket. Set the air fryer to 370 degrees for 8 to 10 minutes.

    Note: Depending on the size of your air fryer this may need to be done in two batches.
