Eating healthy isn’t always fun, but it doesn’t have to be terrible. This week’s Superfood Meal Plan has lots of healthy (and yummy) dishes with at least two superfoods in each.
My motto is “everything in moderation” meaning I will indulge in some cheese and bacon sometimes.
I will order those fries and deep fried chicken at a restaurant.
But balance it out with some extra healthy dishes in between.
My husband is a burger guy, so he was less than thrilled when I told him these were vegetarian burgers.
Reluctantly he took his first bite and was pleasantly surprised.
I was just so happy he tried and loved them that I didn’t even say “told ya so” 😉
Black beans and sweet potatoes are both great superfoods.
Plus there’s also some chopped up spinach as well.
If you want to stay away from the buns you could serve as a lettuce wrap or even just eat with a fork by themselves.
I feel like I had superpowers when this superfood dish turned out so delicious.
So much flavor it felt more like a cheat day meal.
The superfoods here are sweet potatoes, kale, and the avocado on the side.
This dish is great for meal prepping, it’s almost better the next day 🙂
Ahhhh, salmon…quite possibly one of the best superfoods!
High in Omega 3’s which has a variety of health benefits.
This dish would be great paired with Air Fryer Lemon Parmesan Broccoli too!

These breakfast burritos make a lot and can be stored in the freezer.
They are a great, quick, healthy breakfast on the go.
Packed with eggs and spinach, which are both excellent superfoods 🙂
