How to make Grilled Jalapeno Brined Chicken
The brine is a cup and a half of leftover jalapeno juice. Just the liquid left in a jar of pickled jalapenos.
Plus a quarter cup of brown sugar.
I like to put my boneless, skinless chicken thighs in a gallon size plastic bag and add the jalapeno juice and brown sugar right into the bag.
Then massage the bag until evenly mixed.
Put the bag in the fridge and marinate/ brine overnight.
Highly recommend putting it in a bowl in case of a leak, unless you like to live on the edge 😉
Fast forward 24 hours, you’ll remove the chicken and pat it dry. Then season with Old Bay.

Once you’re ready to grill, head outside with your favorite grilling beverage.
And preferably with a glass that matches your mood 😉 haha
Make sure the grill grates are oiled to prevent sticking and put the chicken on a grill over medium high heat.
They take just about 5 to 6 minutes per side, depending on how thick the chicken is.

You can enjoy Grilled Jalapeno Brined Chicken just like this, and it’s perfect with no sauce or anything.
And believe me, I am a girl who is a dipper…I usually like a sauce with just about everything.
It’s also very good cut up as chicken tacos!
This chicken does have a slight kick, but it’s really not as spicy as you would think.
It does have that “Hmmmmm, what is it that makes it so good?!” vibe if you were someone who didn’t know the ingredients.

Grilled Jalapeno Brined Chicken
Grilled Jalapeno Brined Chicken is chicken thighs brined in jalapeno juice and brown sugar, then seasoned and grilled to perfection!
Ingredients
- 2 pounds boneless, skinless chicken thighs (or breasts)
- 1 1/2 cups jalapeno juice (leftover juice from a jar of pickled jalapenos)
- 1/4 cup brown sugar
- Old Bay seasoning
Instructions

Place the chicken in a gallon size plastic bag. Add the jalapeno juice and brown sugar. Massage the bag until the brown sugar is dissolved. Place in a large bowl (in case of a leak) and into the fridge for 24 hours.

Remove the chicken from the bag, discard the bag and brine. Pat the chicken dry with paper towels. Sprinkle both sides lightly with Old Bay seasoning.

Grill over medium to medium high heat for 5-6 minutes per side, depending on thickness of the chicken.
