Chorizo Lasagna Roll Ups
Chorizo Lasagna Roll Ups are an incredible, extra cheesy and creamy…and somewhat spicy version of a lasagna recipe.
Putting my own twists and spins on classic dishes, like lasagna, is something I absolutely LOVE doing.
This one brings a Mexican flare by adding the chorizo and queso, and even more spiciness by using pepper jack cheese.
I will be dreaming about this one for awhile, friends.
My son even claims this is THE best thing I have ever made (even though he says that a lot I never get tired of hearing it).
How to Make Chorizo Lasagna Roll Ups
I am starting with a traditional lasagna noodle, but instead of layering this dish, we are going to make individual rolls with them.
First, boil 8 lasagna noodles according to package directions.
When they are done, rinse them with cold water to prevent them from becoming mushy.
As the noodles were boiling, I made the chorizo in a skillet over medium heat.
The chorizo will take 5 to 7 minutes total.
And it helps if you break it apart as it cooks with a spatula.
Then remove from the skillet and place on a plate lined with paper towels to soak up the excess grease.
I was quite the multitasker with the noodles boiling and chorizo cooking as I grated an 8 ounce block of pepper jack cheese.
Once the noodles are ready, chorizo done, and cheese grated…we get to make some lasagna roll ups 🙂
Spread a small amount of queso in a 9×13 greased casserole dish.
This will help prevent the noodles from sticking.
Spread some ricotta cheese and sprinkle some chorizo on each noodle.
Then roll them up and place in the casserole dish, seam side down.
Repeat with the rest of the rolls and they should fit perfectly in the dish.
Oh, and save just a bit of chorizo to sprinkle over top at the end.
Pour the rest of the queso over top.
And then the pepper jack cheese and extra chorizo.
Cover with foil and bake in a 375 degree oven for 25 to 30 minutes.
Then remove the foil and bake an additional 10 minutes.
Bubbly, cheesy deliciousness and pure comfort food all rolled up into individual packages made with love!
Sounds like a pretty good dinner, right?!

Chorizo Lasagna Roll Ups
Chorizo Lasagna Roll Ups put a Mexican spin on an Italian classic using spicy chorizo sausage and queso for a creamy, cheesy pasta dish
Ingredients
- 8 lasagna noodles
- 1 pound ground chorizo sausage
- 1 15 oz jar queso (I used Tostidos Queso Blanco)
- 1 15 oz container ricotta cheese
- 1 8 oz block pepper jack cheese
Instructions

Boil the lasagna noodles according to package directions. Rinse with cold water.

Set a skillet over medium heat and add the chorizo. Cook 5 to 7 minutes, breaking it apart as it cooks. Remove from skillet and place on a plate lined with paper towels to absorb excess grease.

Add a few spoonfuls of the queso to a greased 9×13 casserole dish.

Shred the pepper jack cheese with a box grater.

Lay the lasagna noodles flat and spread the ricotta cheese evenly on one side. Add the chorizo over the ricotta cheese, roll up and place seam side down in the casserole dish. Leave some chorizo to sprinkle over top.

Pour the rest of the queso over top of the roll ups and sprinkle the pepper jack cheese and remaining chorizo over top. Cover with foil and place in a 375 degree oven for 25 to 30 minutes. Remove foil and bake an additional 10 minutes.
