Birria Eggs Rolls
What to make with leftover Smoked Chicken Birria?! Besides the obvious choice of birria tacos, I also make these incredible Birria Egg Rolls.

How to make Birria Egg Rolls
Starting with cold leftover birria is key because this stuff is juicy.
And really all ya need besides the cold birria are egg roll wrappers, shredded cheese, and vegetable oil for deep frying.
Lay an egg roll wrapper flat and add some cheese to the center.
I went with a Mexican cheese blend, but use any cheese you like.
Then pile on some of the cold birria right on top of the cheese.
Then dip your finger in some water and trace around the edges of the egg roll wrapper.
This will help the wrapper seal properly so you don’t lose any of the yummy goodness while frying.
And just repeat this process to make a few more birria egg rolls.
Fill a saucepan about 2 inches deep with vegetable oil and set it over medium heat on the stove.
After about 5 minutes check with a thermometer and once we are at 350 degrees gently drop in a few egg rolls.
They will cook a minute or two per side until golden brown.
Remove and drain on paper towels before serving.
Birria Egg Rolls are so cheesy and saucy, highly addictive!!
I planned to dip them in the extra saucy goodness from the birria, but honestly they were perfection just like this.

Birria Eggs Rolls
Birria Eggs Rolls is the perfect recipe to enjoy leftover birria, of course we love our birria tacos but these are a deep fried unique treat!
Ingredients
- 1 1/2 cups shredded cheese of choice
- 2 cups cold leftover birria (recipe link for birria in post above)
- 8 to 10 egg roll wrappers
- vegetable oil, enough to fill a saucepan about 2 inches deep
Instructions

Place egg roll wrappers flat, diagonal with a corner facing toward you. Sprinkle some cheese and a few spoonfuls of birria in the center of each wrapper. Dip your finger in water and trace the outside edges of the wrappers. Fold the top over the filling, fold the sides in, and roll into an egg roll. (Pictures show examples in post above).

Pour vegetable oil into a saucepan 2 inches deep and place over medium heat. After 5 minutes the oil should be at 350 degrees. Carefully place 2 to 3 egg rolls at a time into the oil. Fry for 1 to 2 minutes per side. Remove and place on paper towels to drain extra oil. Repeat with remaining egg rolls.
