Birria Eggs Rolls is the perfect recipe to enjoy leftover birria, of course we love our birria tacos but these are a deep fried unique treat!

Ingredients
  • 1 1/2 cups shredded cheese of choice
  • 2 cups cold leftover birria (recipe link for birria in post above)
  • 8 to 10 egg roll wrappers
  • vegetable oil, enough to fill a saucepan about 2 inches deep
Instructions
  1. Place egg roll wrappers flat, diagonal with a corner facing toward you. Sprinkle some cheese and a few spoonfuls of birria in the center of each wrapper. Dip your finger in water and trace the outside edges of the wrappers. Fold the top over the filling, fold the sides in, and roll into an egg roll. (Pictures show examples in post above).

  2. Pour vegetable oil into a saucepan 2 inches deep and place over medium heat. After 5 minutes the oil should be at 350 degrees. Carefully place 2 to 3 egg rolls at a time into the oil. Fry for 1 to 2 minutes per side. Remove and place on paper towels to drain extra oil. Repeat with remaining egg rolls.

  3. Slice and serve.
