This Slow Cooker Italian Chicken easily just became a new favorite in our family!
We tried it for the first time at dinner last night and it’s one of those dishes that makes you instantly say “Wow!”
And dig in for another bite while doing the happy dinner dance.
I mean, at least in our family we have a happy dinner dance when something is extraordinary…and this one really is!
If I managed to throw this together the morning before work while getting the kids ready for school, anyone can do it 🙂
Just a few simple ingredients, and even better…no chopping or dicing anything.
How to make Slow Cooker Italian Chicken
Two pounds of chicken breasts go into the slow cooker.
Then whisk together a whole bottle of Italian dressing, some garlic paste, parmesan cheese, Italian seasoning, kosher salt, and pepper.
Pour this mixture over the chicken and turn the slow cooker to low.

Fast forward six to eight hours and this is what you’ll see.
And honestly it would probably be amazing if eaten just like this.
But we like to take things up a notch around here.
So I added a block of cream cheese and five ounces of fresh spinach leaves about thirty minutes before serving.
At first you’ll think there’s no way all this spinach will wilt down, but trust me it does.
Stir it a few times during those thirty minutes and the cream cheese will melt beautifully.
The spinach will cook down and the chicken will shred up with little to no effort.
The final step is adding four cups of cooked egg noodles.
Just stir them in and dinner is ready!
A little garnish of parsley over top makes this Slow Cooker Italian Chicken even more gorgeous!
My son is usually a fan of his food being separate.
Like he eats what we eat, just not mixed together.
He even tried this and said “Hey, it actually IS good!” haha, I will take that as a compliment for sure.

Slow Cooker Italian Chicken
Just a few simple ingredients in this easy and delicious dinner
- 2 pounds boneless, skinless chicken breasts
- 1 Tbsp garlic paste or minced garlic
- 16 oz Italian dressing
- 1/2 cup grated parmesan cheese
- 1 Tbsp Italian seasoning
- kosher salt, pepper
- 8 oz cream cheese
- 5 oz fresh spinach leaves
- 4 cups cooked egg noodles
- Optional: fresh parsley for garnish
Place the chicken in the slow cooker. In a bowl whisk together the garlic, Italian dressing, grated parmesan, Italian seasoning, kosher salt, and pepper. Pour over top of the chicken.
Cook on low for 6 to 8 hours. 30 minutes before serving add the cream cheese and spinach, and stir a few times (the chicken will break into smaller pieces as you stir, the cream cheese will slowly melt into the sauce, and the spinach will cook down).
Add the cooked egg noodles and stir until evenly mixed. Garnish with fresh parsley if desired.
