Crockpot French Onion Chicken

There’s just something comforting about crock pot/ slow cooker meals.
Knowing when you’re at work or away for the day that dinner will be waiting for you when you get home.
The anticipation of walking through your door to the delicious smells coming from your kitchen.
How to Make Crockpot French Onion Chicken
It starts with a few boneless, skinless chicken breasts and lots of thinly sliced onions and garlic in the crockpot.
This may look like a lot of onions, but as they cook they reduce down to almost nothing.
Then whisk together some beef broth, balsamic vinegar, worcestershire sauce, sugar, and cornstarch.
Pour this mixture over the chicken and onions.
Set the crock pot to low for 6-8 hours.
Now the cornstarch doesn’t add flavor, but it will help the liquid to thicken just a bit.
THIS is what you will come home to!
And let me just say it really smells just like French onion soup!
I turned the heat to high for the last hour just to get the liquid to bubble and thicken more.
The best part of french onion soup is the bread and cheese topping, right?!
Break the French onion chicken apart with a fork into smaller pieces and top with cubed ciabatta bread…
Lots of provolone cheese and fresh thyme go over the bread.
It only took about 5 minutes to melt to cheesy perfection.
A little fresh thyme over top of the French Onion Chicken adds a little something special đŸ™‚
We had some leftovers to bring to work for lunch the next day.
In my opinion I really think it was even better reheated, all the flavors had time develop even more!

Crockpot French Onion Chicken
Yummy french onion chicken slow cooked to perfection
Ingredients
- 1 1/2 pounds chicken breasts
- kosher salt, pepper
- 2 yellow onions thinly sliced
- 3 cloves garlic minced
- 1 cup beef broth
- 1 Tbsp balsamic vinegar
- 1 Tbsp worcestershire sauce
- 1/2 Tbsp sugar
- 1/2 Tbsp cornstarch
- 2 cups cubed ciabatta or italian bread
- 6 slices provolone or mozzarella cheese
- Optional: fresh thyme
Instructions

Place the chicken in the crockpot, sprinkle both sides with kosher salt and pepper. Put the sliced onions and garlic over the chicken.

In a bowl whisk together the beef broth, balsamic vinegar, worcestershire sauce, sugar, and cornstarch. Pour this mixture over the chicken and onions. Cook on low for 6-8 hours.
Recommend to turn the crock pot on high for the last hour, the sauce will thicken more.

Before serving break the chicken apart with a fork into smaller pieces, place the cubed bread and cheese over top and cover the crockpot until melted. Serve with fresh thyme over top if desired.
