
Zucchini Muffins with Brown Sugar Glaze
You guys!!!! I am usually not much of a baker, but after making this recipe for Zucchini Muffins with Brown Sugar Glaze I feel like I should bake more often!
They turned out perfectly moist and sweet and the glaze over top…Oh My Word…that glaze!
My daughter came home from work with garden fresh zucchini and asked me to make zucchini bread with it…
Well somehow I went the muffin route instead.
Maybe that’s because I don’t own an actual loaf pan, but I do have muffin tins.
How to make Zucchini Muffins with Brown Sugar Glaze
First step is grating the zucchini so you have 3 cups.
I just used my trusty metal box grater that was given to me by my grandma. It’s oldie but goodie 🙂

Next up is combining the dry ingredients in a bowl.
We have 3 cups flour, 2 cups sugar (I wanted these sweet), baking soda, ground cinnamon and nutmeg, and some salt.

Then crack 3 eggs into another bowl with vegetable oil and beat them on medium speed for a minute.
Next add some milk and vanilla and a cup of the dry ingredients.
Continue to beat on medium speed and add the dry ingredients a cup at a time until it’s all incorporated.
Finally stir in the grated zucchini and your muffin batter is done 🙂

Butter two muffin pans to make 24 muffins total.

And scoop the batter in.
I like to use an ice cream scoop and I also fill them to the top so they are almost like jumbo size muffins.

Bake the muffins in a 350 degree oven for 20 minutes.
And while they bake you can make the brown sugar glaze by combining melted butter with brown sugar.
It won’t mix together completely and will be very thick.
That’s ok though, it will actually create a glaze as it bakes in the oven.

So after 20 minutes in the oven brush or spoon the brown sugar butter mixture over each muffin.
Once it hits the hot muffins it will start to melt.
Then back into the oven for another 3 to 5 minutes.

You can see how that gorgeous glaze caramelizes and gets golden brown over the muffins. YUM!

I’m not much of a sweets person, but these Zucchini Muffins with Brown Sugar Glaze were totally addicting to me.

So fluffy and tasty, and maybe we could even call them healthy since they do have a vegetable in them 😉

Zucchini Muffins with Brown Sugar Glaze
Zucchini Muffins with Brown Sugar Glaze is the perfect way to use fresh zucchini, a sweet zucchini muffin with a gorgeous brown sugar glaze
Ingredients
Zucchini Muffins
- 3 cups all purpose flour
- 2 cups sugar
- 2 tsps baking soda
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp kosher salt
- 1 cup vegetable oil
- 3 eggs
- 1/2 cup milk
- 1 tsp vanilla
- 3 cups grated zucchini
- 2 Tbsps melted butter
Brown Sugar Glaze
- 1/4 cup melted butter
- 1/4 cup brown sugar
Instructions
Zucchini Muffins

Add flour, sugar, baking soda, cinnamon, nutmeg, and kosher salt to a bowl and stir until evenly mixed.

In a separate bowl add the oil and eggs. Beat with a hand mixer on medium speed for 1 minute. Add the milk, vanilla, and a cup of the dry ingredients and beat on medium speed. Continue to add more dry ingredients and beat until all of the dry ingredients are added and batter is smooth, be careful not to overmix.

Stir in the grated zucchini.

Brush 2 muffin tins with melted butter (24 muffins total) and scoop batter into the muffin tins (I filled my muffin tins to the top).
Note: You could use muffin liners instead and skip the buttering step.

Bake in a 350 degree oven for 20 minutes.

Brush or spoon the Brown Sugar Glaze over top of each muffin and bake 3 to 5 more minutes.

Let the muffins cool before removing them.

Mix the melted butter and brown sugar in a bowl.
