Zucchini Muffins with Brown Sugar Glaze is the perfect way to use fresh zucchini, a sweet zucchini muffin with a gorgeous brown sugar glaze

Ingredients
Zucchini Muffins
  • 3 cups all purpose flour
  • 2 cups sugar
  • 2 tsps baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp kosher salt
  • 1 cup vegetable oil
  • 3 eggs
  • 1/2 cup milk
  • 1 tsp vanilla
  • 3 cups grated zucchini
  • 2 Tbsps melted butter
Brown Sugar Glaze
  • 1/4 cup melted butter
  • 1/4 cup brown sugar
Instructions
Zucchini Muffins
  1. Add flour, sugar, baking soda, cinnamon, nutmeg, and kosher salt to a bowl and stir until evenly mixed.

  2. In a separate bowl add the oil and eggs. Beat with a hand mixer on medium speed for 1 minute. Add the milk, vanilla, and a cup of the dry ingredients and beat on medium speed. Continue to add more dry ingredients and beat until all of the dry ingredients are added and batter is smooth, be careful not to overmix.

  3. Stir in the grated zucchini.

  4. Brush 2 muffin tins with melted butter (24 muffins total) and scoop batter into the muffin tins (I filled my muffin tins to the top).

    Note: You could use muffin liners instead and skip the buttering step.

  5. Bake in a 350 degree oven for 20 minutes.

  6. Brush or spoon the Brown Sugar Glaze over top of each muffin and bake 3 to 5 more minutes.

  7. Let the muffins cool before removing them.

Brown Sugar Glaze
  1. Mix the melted butter and brown sugar in a bowl.
