I knew I had to make something very special with my first garden zucchini, so I went with an easy recipe for Air Fryer Parmesan Zucchini Fries!

It’s my very FIRST zucchini of the year from my garden, friends!!!

SO exciting to pick the very first thing grown, am I right?!

Holy cow they did not disappoint at all, and they were extra yummy with the Garlic Parmesan Ranch Dipping Sauce.

I mean, he might have been a little lopsided, but hey we embrace imperfections around here.

Perfection is overrated for sure.

How to make Air Fryer Parmesan Zucchini Fries

I cut the zucchini into wedges, trying very hard to make them all right around the same size.

If they are the same size, they will all cook evenly.

So I set up my little breading station right by my air fryer basket just like this.

One bowl with beaten eggs, one bowl with panko, parmesan, garlic powder, salt, and pepper.

Yes…I made a mess…panko bread crumbs were scattered on my counter, but easy to clean up 🙂

Place each panko coated zucchini fry into the air fryer basket in a single layer.

Spray with a bit of olive oil cooking spray and set it for 15 minutes at 400 degrees.

Oh, and they are hot, so be careful removing them. I may or may not have learned this the hard way 😉

Serve with a mixture of ranch dressing, parmesan cheese, and garlic powder and you have one of the best side dishes ever.

Air Fryer Parmesan Zucchini Fries

Ingredients

Air Fryer Parmesan Zucchini Fries

  • 1 large zucchini (or 2 small zucchini)
  • 2 eggs
  • 1 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • olive oil cooking spray

Garlic Parmesan Ranch Dipping Sauce

  • 1/2 cup Ranch dressing
  • 1 Tbsp grated parmesan cheese
  • 1/2 tsp garlic powder

Instructions

Air Fryer Parmesan Zucchini Fries

  1. Cut the zucchini into fry size wedges.

  2. Crack the eggs into a bowl and beat them together.

  3. Add the panko, parmesan cheese, garlic powder, salt, and pepper into another bowl and stir until evenly mixed.

  4. Dip each zucchini fry into the egg, then into the panko mixture, press the panko into the zucchini and place in the air fryer basket in a single layer. Repeat with remaining zucchini fries.

  5. Spray lightly with olive oil cooking spray and set the air fryer for 15 minutes at 400 degrees.

  6. Serve with the Garlic Parmesan Ranch Dipping Sauce.

    Note: Depending on the size of your air fryer, these may need to be done in two smaller batches.

Garlic Parmesan Ranch Dipping Sauce

  1. Mix all ingredients together and serve with the zucchini fries.
