Here is this week’s fabulous meal plan, and it’s a good one! It’s the week before Thanksgiving, so I tried to stay away from anything too Thanksgiving-ish. I also thought ahead about how to save you the most time. So this week we are making a big crock pot full of shredded buffalo chicken and using it in several recipes.
As you know, my meal planning motto is making three meals and a fun weekend recipe. If I cooked every night I would be a little crazier than I already am. So we have a delicious soup plus the three recipes using the shredded buffalo chicken.

Meal #1: Italian Sausage and Kale Soup
This soup could even be made on the weekend and served on a busy weeknight. I used turkey sausage to cut a few calories 🙂
Make this Shredded Buffalo Chicken to use in ALL THREE of the rest of the recipes for this week 🙂
You may need to double this depending on the size of your family.
Meal #2: Buffalo Chicken Bacon Ranch Sliders
This one is one of my husband and kids favorites! Serve with some fresh fruit and oven baked fries from the freezer section of the grocery store and it’s a complete meal that everyone will love!
If you have younger kids like I do, they may like the chicken and sweet potato separate. But the husband and teens in my family devour these. Plus they are really good leftover if you have extras.

If you’re lucky enough to still have some shredded buffalo chicken left…you could also make Air Fryer Buffalo Chicken Tostadas.
