Air Fryer Buffalo Chicken Mac and Cheese Bites
My daughter had the genius idea of making a recipe for Air Fryer Buffalo Chicken Mac and Cheese Bites!
Just like that, Air Fryer Buffalo Chicken Mac and Cheese Bites came to be a thing!
I make Simple Shredded Chicken for Meal Prep so we mixed it with a family size container of Bob Evans Mac and Cheese and buffalo sauce..

Next we put spoonfuls of this delicousness on a lined baking sheet.
Then put the tray in the freezer for an hour.
They will be easier to handle when frozen.

Place each frozen mac and cheese bite into a bowl with beaten eggs.
Then roll it around in some panko bread crumbs.
And press the panko bread crumbs into them slightly.
Into the air fryer basket they go.
Spray some olive oil spray on top to make them extra golden brown and set the air fryer for 15 minutes at 390 degrees.

THIS is what you will see when they are finished cooking!

Air Fryer Buffalo Chicken Mac and Cheese Bites were extra amazing!
They were a little more delicate to eat compared to the original version, so we ended up using a fork for some of the bigger bites.

So here is my super proud teenager who turned regular mac and cheese bites into something extra special!
And I’m am one happy mom getting to spend quality time in the kitchen with this sweet girl 🙂

Air Fryer Buffalo Chicken Mac and Cheese Bites
Buffalo mac and cheese with chicken, breaded, and air fried to crispy perfection
Ingredients
- 1 (20 oz) container Bob Evans Mac and Cheese
- 1 cup diced, cooked chicken
- 1/4 cup buffalo sauce (I used Frank’s Buffalo Wing Sauce)
- 2 eggs beaten
- 2 cups panko bread crumbs
- olive oil spray
Instructions

In a bowl add the Bob Evans Mac and Cheese, diced chicken, and buffalo sauce. Stir until evenly combined.

Line a baking sheet or tray with parchment paper or foil. Drop spoonfuls of the mac and cheese onto the sheet. Freeze at least 1 hour.

Beat the eggs in a bowl. Pour the breadcrumbs in another bowl. Remove 7 of the mac and cheese bites from the freezer. Dip each in the egg mixture and then into the panko breadcrumbs. Place them into the air fryer basket, not touching. Spray lightly with some of the olive oil non stick cooking spray.

Set the air fryer for 15 minutes at 390 degrees. Remove from basket, repeat with remaining 7 mac and cheese bites.
