Steak Tacos with Avocado Corn Relish
These Steak Tacos with Avocado Corn Relish are the perfect example of a creative dinner recipe made basically out of leftovers.
The inspiration for these tacos were from my summer trip to New York.
As you can see, I get very excited about tacos 😉

Over the weekend we made Cajun Garlic Butter Smoked Chicken, a Santa Maria Tri Tip, and some Smoked Garlic Butter Corn.
The leftover steak and corn were used in this delicious taco creation 🙂

How to make Steak Tacos with Avocado Corn Relish
Since the steak was already cooked, I just diced it up and warmed it in the microwave.

I cut the leftover corn kernels off the cob.
And tossed them with a diced avocado, fresh chopped cilantro, lime juice, kosher salt, and pepper.
Canned corn will work just fine if you don’t have the leftover corn.

Next step is to fill some tortillas with the steak and drizzle some sour cream over top.
I love using the street taco size tortillas, actually a little obsessed with them!

Then add some of the corn and avocado relish over top…

You can’t even look at these amazing Steak Tacos with Avocado Corn Relish and know this was basically a leftover meal, am I right?!

This is just one of the many reasons we LOVE leftover night at our house 🙂

Steak Tacos with Avocado Corn Relish
The corn avocado relish makes these the ultimate steak tacos
Ingredients
- 1 avocado
- 1 cup corn kernels
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- kosher salt, pepper
- 8 street taco size tortillas
- 3 cups cooked, diced steak
- 1/2 cup sour cream
- 1 cup shredded Monterey Jack cheese
Instructions

Dice the avocado and place in a bowl. Add the corn kernels, cilantro, lime juice, kosher salt, and pepper. Gently toss until evenly mixed.

Warm the tortillas and steak if needed.

In each tortilla add some steak, sour cream, and top with the avocado corn relish and cheese.
