Garlic Herb Oven Roasted Potatoes

Some of the best side dishes to go with dinner are the simplest. This is very true of these Garlic Herb Oven Roasted Potatoes.

I have been making these potatoes this same way for more than 20 years (eeeek that makes me feel old).

They are my kid’s favorite and most requested side dish by far!

I used fresh parsley and fresh thyme for these, but I have also used fresh rosemary as well.

Mix it up with your favorite herbs if you prefer.

Sometimes my kids will dip these in either ranch or ketchup.

But sometimes they just enjoy them as is.

How to make Garlic Herb Oven Roasted Potatoes

Dice two pounds of redskin potatoes into half inch pieces.

Then toss them with olive oil, season salt, kosher salt, pepper, garlic, and of course the chopped, fresh herbs.

Once they are evenly coated, spread them on a lined baking sheet in a single layer.

Lining the baking sheet makes for easier clean up.

And who doesn’t love an easier cleanup, right?!

These will bake in a 425 degree oven for 45 minutes total.

Toss them a few times as they cook.

No need to be perfect about it, just a quick little toss is all they need.

When ready to serve these Garlic Herb Oven Roasted Potatoes, sprinkle with a bit more of the fresh parsley.

That little pop of color will make them look even prettier 🙂

Ingredients

  • 2 pounds redskin potatoes
  • 2 Tbsps olive oil
  • 2 Tbsps garlic paste (or fresh minced garlic)
  • 1/2 cup fresh chopped parsley (plus more to sprinkle over top)
  • 1 Tbsp fresh thyme leaves
  • 2 tsps season salt (I used Lawry's)
  • kosher salt, pepper

Instructions

  1. Cut the potatoes into half inch cubes. Place them in a bowl.

  2. To the bowl add the olive oil, garlic, parsley, thyme, season salt, kosher salt, and pepper. Toss until evenly mixed and put them in a single layer on a lined baking sheet.

  3. Bake in a 425 degree oven for 45 minutes, toss them a few times as they cook.

  4. Serve with more parsley sprinkled over top.
