Weekly Meal Plan April 26

I am doing this week’s meal plan a little differently, all cook once eat twice recipes!

My normal routine is usually cooking three meals during the week and something extra special on the weekend when I have extra time.

Well, my “normal” has been gone for a few weeks now and I am finding myself cooking every single meal…every single day.

Now I am a girl who LOVES cooking, but this has been exhausting! I’m sure you all feel me 🙂

So this week’s meal theme is cook once eat twice recipes.

Yes…you read that correctly!

Cooking one time, but making two meals with the same ingredients.

I hope you are all as excited about this as I am 🙂

Roasted Veggie and Goat Cheese Quesadilla AND Roasted Veggie and Goat Cheese Crostini

So for this one you will roast the veggies once and make these two fabulous recipes with them.

The first is more of a meal, Roasted Veggie and Goat Cheese Quesadillas.

Adding in some shrimp or chicken would be a great addition as well.

The second is more of a snack, but adding a salad would make it feel more dinner-ish.

Both of these use almost all the same ingredients so a HUGE time saver!



Veggie and Goat Cheese Crostini

Buffalo Chicken Bacon Ranch Sliders AND Grilled Buffalo Chicken Flatbreads

This one starts with a slow cooker of shredded buffalo chicken and you will use it in both of these recipes.

The first is a huge hit with the kids and teens, or at least it was at my house.

Buffalo Chicken Bacon Ranch Sliders.

Suggested side would be frozen fries either baked in the oven or air fryer, or some cut up fruits and veggies.

You’ll also use the buffalo chicken in these Grilled Buffalo Chicken Flatbreads.

So yummy and super simple.

Honey Bourbon Grilled Steak AND Cast Iron Steak Nachos

If you grill enough steak so you know you’ll have leftovers, you get to enjoy it twice.

The key here is making sure you have enough, I mean we rarely have leftover steak 😉

Enjoy a steak dinner one night with whatever sides you like.

Side suggestions are Garlic Rosemary Fingerling Potatoes, Green Beans with Bacon, or Cheesy Ranch Potatoes.

Use the leftover steak to make these Cast Iron Steak Nachos for a fun snack-y type dinner the next day.

These nachos have an amazing recipe for Candied Jalapenos that I highly recommend.

Korean Chicken Rice Bowls AND Slow Cooker Korean Tacos

This is another one that starts in the slow cooker…slow cooked Korean chicken will be the one thing you cook and use it in two recipes.

First up is Korean Chicken Rice Bowls, and you could for sure use cauliflower rice instead of regular rice if you prefer.

And next up is Korean Chicken Tacos!

Both of these also use the same sauce that you can make once and use twice 🙂
