Brussel Sprout and Apple Salad

I made this side dish recipe for Brussel Sprout and Apple Salad for our family’s Christmas dinner.

It would be a tasty addition to any holiday meal, or cut the recipe in half for a healthy dinner.

You could easily leave out the bacon for a yummy vegetarian dish.

I am making a simple homemade creamy balsamic dressing, but a store-bought creamy balsamic works too!

How to make Brussel Sprout and Apple Salad

First set a skillet over medium heat.

Use kitchen scissors to cut the bacon into the skillet.

Cook 8 to 10 minutes, stirring a few times.

Remove once it’s cooked how you like and put the bacon on paper towels.

For the dressing, simply whisk together 1/2 cup mayo, 1/4 cup balsamic vinegar, a tablespoon of sugar, kosher salt, and pepper.

Adding in a few spoonfuls of the bacon grease does amp up the flavor as an optional step.

Next slice or shred 24 ounces of Brussel sprouts, removing the stems.

And place them in a large bowl.

Then dice two Honeycrisp apples and add them to the bowl.

I left the skin on.

The crumbled bacon and 3/4 cup dried cranberries go in next.

And finally, some goat cheese crumbles.

I did save some goat cheese crumbles to sprinkle over top before serving.

If you don’t like goat cheese you could use feta cheese, or even shredded cheddar.

Give this a toss to combine everything with tongs.

Pour the dressing on and toss to combine either right before serving, or you can do this about an hour before serving.

Brussel Sprout and Apple Salad has cranberries and goat cheese with creamy balsamic dressing, a festive shaved brussel sprout salad recipe! A great side dish to feed a crowd or cut the recipe in half and enjoy as a meal!

Ingredients

  • 8 slices bacon
  • 24 ounces Brussel sprouts stems removed
  • 2 Honeycrisp apples
  • 1/2 cup mayo
  • 1/4 cup balsamic vinegar
  • 1 tablespoon sugar
  • kosher salt, pepper
  • 3/4 cup dried cranberries
  • 3/4 cup crumbled goat cheese (or feta cheese)

Instructions

  1. Set a skillet over medium heat. Use kitchen scissors to cut the bacon into the skillet. Cook 8 to 10 minutes, stirring a few times. Remove and put bacon on paper towels.

  2. Slice the Brussel sprouts into thin pieces or use a mandolin to shave them. Dice the apples with skin on.

  3. Put the mayo, balsamic vinegar, sugar, kosher salt, and pepper in a bowl. Whisk until combined.

    Optional: Add a few spoonfuls of the bacon grease to the dressing for a boost of flavor if desired.

  4. Put the Brussel sprouts, cooked bacon, diced apples, and cranberries in a large bowl. Add the dressing and mix until combined. Gently fold in the goat cheese crumbles.
