Set a skillet over medium heat. Use kitchen scissors to cut the bacon into the skillet. Cook 8 to 10 minutes, stirring a few times. Remove and put bacon on paper towels.
Slice the Brussel sprouts into thin pieces or use a mandolin to shave them. Dice the apples with skin on.
Put the mayo, balsamic vinegar, sugar, kosher salt, and pepper in a bowl. Whisk until combined.
Optional: Add a few spoonfuls of the bacon grease to the dressing for a boost of flavor if desired.
Put the Brussel sprouts, cooked bacon, diced apples, and cranberries in a large bowl. Add the dressing and mix until combined. Gently fold in the goat cheese crumbles.
