Air Fryer Pesto Prosciutto Tortilla Pizzas

Can you you believe that air fryer pesto prosciutto tortilla pizzas is actually a recipe made out of leftovers?!

I made a mozzarella salad not too long ago and had some of the fresh mozzarella, prosciutto, pesto, etc. left over… and leftovers certainly do not go to waste around here.

I wanted to make some sort of a pizza or flatbread with the leftovers but all I could find were soft tortillas.

It was time to get creative and this was the delicious result!

How to make air fryer pesto prosciutto tortilla pizzas

Since it was just me having dinner on this particular evening I put one soft tortilla into the air fryer and sprayed a little nonstick spray over top.

Set the air fryer to 400 degrees for three to four minutes, depending on how crispy you want your crust.

It’s perfectly normal for the tortilla to puff up like this after the first few minutes.

You could easily wait a few minutes for the tortilla to deflate or use a spoon to press down the center.

Topping ideas for these tortilla crust pizzas are endless!

But since I already had the pesto and fresh mozzarella that’s what I went with first for these pizzas.

I also added some torn pieces of prosciutto and sliced roasted red peppers.

Next place this back into the 400 degree air fryer for an additional three to four minutes.

We just want the cheese to be nice and melty and the tortilla to be crisped how you prefer.

A little sprinkle of pine nuts completes the gorgeous air fryer pesto prosciutto pizzas!

It would be super fun to have a pizza building evening where everyone makes their own pizzas according to toppings of choice.

The tortilla creates a super thin and crispy crust which makes these quite unique and tasty!

Air Fryer Pesto Prosciutto Tortilla Pizzas are such an easy air fryer recipe, a thin crispy golden crust with any toppings that you prefer!

Ingredients

  • 4 soft taco size flour tortillas (bigger tortillas may require more cook time)
  • non stick cooking spray
  • 8 oz fresh mozzarella (or shredded mozzarella)
  • 4 to 6 slices prosciutto torn into smaller pieces
  • 2 to 3 oz pesto
  • Toppings of choice such as: goat cheese, roasted red pepper slices, pine nuts, etc.)

Instructions

  1. Place the tortillas in the air fryer basket one or two at a time depending on the size of your air fryer.

  2. Spray the tops with nonstick cooking spray and set the air fryer to 400 degrees for three to four minutes, depending on how crispy you would like your crust .

  3. The tortillas will puff up, just use a spoon to flatten them and add the cheese (if using fresh mozzarella break into smaller pieces), prosciutto, dollops of pesto and any other toppings of choice such as goat cheese, slices of roasted red pepper, and/or pine nuts if desired.

  4. Set the air fryer to 400 degrees for an additional three to four minutes or until the cheese is melted and the tortilla crust is cooked how you prefer.

  5. Let cool slightly before serving and repeat with the remaining tortilla crust pizzas.
