Chicken Teriyaki Stir Fry

My sweet 18 year old is wanting to cook more, and she has the skills and recipes to give me a run for my money. Her easy and healthy recipe for Chicken Teriyaki Stir Fry was enjoyed by all of us đŸ™‚

When this cutie says she wants to make dinner for the family, your proud mom smile beams brightly from ear to ear (at least mine did)!

How to make Chicken Teriyaki Stir Fry

I did not do a thing except take a few pictures.

She cut two chicken breasts into chunks and cooked those in a skillet over medium heat with some olive oil, kosher salt, and pepper.

These took about 8 minutes.

Then she removed the chicken from the pan and set aside.

She chopped up all these veggies herself and did an amazing job!

Some broccoli, carrots, red bell pepper, and an onion go into the same skillet.

Add some more olive oil and cook these over medium heat for 8 to 10 minutes.

About halfway through she added some minced garlic and crushed red pepper flakes.

Once the veggies are done she put the chicken back into the pan and added the sauce.

She whisked together chicken broth, teriyaki sauce, and cornstarch.

The cornstarch will make the sauce thicken as it cooks.

So don’t worry if the sauce looks thin at this point. I promise it will thicken.

Just a few more minutes in the skillet, stirring occasionally, and you have a gorgeous and healthy Chicken Teriyaki Stir Fry!

My daughter wanted to serve this over rice.

We used two of the microwave pouches of jasmine rice and it was perfect together!

I was so proud watching her cook and enjoy it as much as I do!

But was even more proud when tasting how delicious her recipe turned out đŸ™‚

She was super funny and called “not it” on helping with the dishes since she cooked…hey, good deal sweet girl đŸ™‚

Ingredients

  • 2 Tbsps olive oil
  • 2 chicken breasts cut into 1 inch pieces
  • kosher salt, pepper
  • 2 carrots peeled and chopped into 1 inch pieces
  • 1 red bell pepper chopped into 1 inch pieces
  • 1 onion chopped into 1 inch pieces
  • 1 pound broccoli 1 inch florets cut from stem
  • 2 cloves garlic minced
  • 1/2 tsp crushed red pepper flakes
  • 1 14 oz can chicken broth
  • 1/2 cup teriyaki sauce
  • 1 1/2 Tbsps cornstarch
  • Optional: serve over cooked rice

Instructions

  1. Add 1 Tbsp of the olive oil to a large skillet over medium heat. Add the chicken with kosher salt and pepper. Cook 8 to 10 minutes, stirring occasionally. Remove from pan and set aside.

  2. To the same skillet over medium heat add remaining 1 Tbsp olive oil and carrots, red bell pepper, onion, and broccoli. Cook 5 minutes, stirring occasionally. Add garlic, crushed red pepper, kosher salt, and pepper and cook 5 more minutes.

  3. In a bowl, whisk together the chicken broth, teriyaki sauce, and cornstarch.

  4. Add the chicken to the skillet with the veggies and slowly add the chicken broth mixture, stirring occasionally. Cook 3 to 5 more minutes until the sauce thickens into a glaze.

  5. Serve over cooked rice if desired.
