
Salmon Tacos with Pineapple Slaw
I am mixing up taco night with this healthy and easy Salmon Tacos with Pineapple Slaw recipe.
For as fancy as these look, they are so simple and easy to make (especially the air fryer version).
Tacos are one of my family’s favorite meal, and we are also huge salmon lovers.
Combining the two into one dish sounded like a fabulous idea.
Using store bought slaw in a bag and already cut pineapple made this even easier to make on a busy weeknight.

How to Make Salmon Tacos with Pineapple Slaw
The first step is brushing a pound of salmon with sweet Thai chili sauce.
Then season with kosher salt and pepper.

Cooking the salmon comes with two choices…air fryer or oven.
If you are air frying them, place them skin side down in the air fryer basket.
And set it to 400 degrees for 12 minutes.
In the oven put them on a baking sheet and into a 400 degree oven for 12 minutes.
Thicker pieces of salmon may need a few more minutes of cooking.

While the salmon cooks you can make the slaw.
Combine two cups of slaw and a cup of cilantro in a bowl.

Then add some diced pineapple, ranch dressing, more sweet Thai chili sauce, kosher salt, and pepper.
Toss it all together with tongs.

Once the salmon is done, flake it into smaller pieces to add to the tacos.

Add the salmon with the slaw to warm flour tortillas for the best taco night ever!

You could add additional toppings like hot sauce, jalapenos, or even more of the sweet Thai chili sauce.

Salmon Tacos with Pineapple Slaw
Salmon Tacos with Pineapple Slaw has sweet Thai chili glazed salmon served in tortillas and topped with a gorgeous pineapple slaw
Ingredients
- 1 pound salmon
- 1/4 cup sweet Thai chili sauce
- kosher salt, pepper
- 2 cups slaw
- 1 cup chopped cilantro
- 1 cup diced pineapple
- 2 to 3 Tbsps ranch dressing
- 8 fajita size flour tortillas
- Optional toppings: hot sauce, jalapeno, more sweet Thai chili sauce
Instructions

Brush half of the sweet Thai chili sauce on the salmon and season the salmon with kosher salt and pepper.

Cook the salmon according to one of these methods:
Oven: Place the salmon on a baking sheet and bake at 400 degrees for 12 to 14 minutes.
Air Fryer: Put the salmon in the air fryer basket and set it to 400 degrees for 12 to 14 minutes,

While the salmon cooks, make the pineapple slaw by combining the slaw, cilantro, diced pineapple, ranch dressing, kosher salt, and pepper in a bowl. Toss until evenly combined.

Assemble the tacos by adding some flaked salmon to the flour tortillas and top with the pineapple slaw. Add other toppings such as hot sauce, jalapeno, and more of the sweet Thai chili sauce if desired.
