Shrimp Chorizo Sheet Pan Fajitas
An easy, delicious dinner that is FAR from boring AND takes only 10 minutes to throw together… I bring you Shrimp Chorizo Sheet Pan Fajitas!
Sounds kinda too good to be true am I right?!
It’s super easy to clean up too with only one dirty sheet pan, or line it with foil for almost no cleanup at all.
Ok, now you probably just think I am making things up… keep reading and you’ll see sometimes magical recipes do exist 🙂
How to make Shrimp Chorizo Sheet Pan Fajitas
First slice a red bell pepper, a yellow bell pepper, two jalapenos, and an onion.
Remove the seeds and stems from the peppers, of course.
And place them on a baking sheet.
Then add some olive oil, fajita or taco seasoning blend, and some kosher salt and pepper.
Toss the veggies on the sheet pan until evenly coated.
Then break apart some ground chorizo sausage into smaller pieces and place them around the baking sheet.
This will go into a 400 degree oven for 15 to 18 minutes to start.
Toss the veggies and sausage together with tongs.
Then sprinkle some fresh minced garlic over the dish and add a pound of shrimp.
A little more taco or fajita seasoning over the shrimp and back into to 400 degree oven for 6 to 8 minutes.
Serve Shrimp Chorizo Sheet Pan Fajitas with warm tortillas and toppings of choice!
I set out some lettuce, cheese, sour cream, and hot sauce and everyone made their own fajitas.
Such a simple, yet insanely tasty dinner 🙂

Shrimp Chorizo Sheet Pan Fajitas
Shrimp Chorizo Sheet Pan Fajitas is an easy one pan dinner recipe, a family favorite meal that takes minutes to throw together!
Ingredients
- 1 red bell pepper
- 1 yellow bell pepper
- 1 to 2 jalapeno peppers
- 1 onion
- 2 tablespoons olive oil
- 1 1/2 to 2 tablespoons fajita or taco seasoning blend (store bought or homemade) plus more to sprinkle over top
- kosher salt, pepper
- 10 ounces ground chorizo sausage
- 4 to 5 cloves garlic minced
- 1 pound shrimp peeled and deveined
- Optional: soft flour tortillas, lettuce, cheese, sour cream, hot sauce, lime wedges, etc.
Instructions

Slice the peppers (seeds and stems removed), and peel and slice the onion. Place them on a lined baking sheet. Add the olive oil, fajita or taco seasoning, kosher salt, and pepper. Toss until evenly coated.

Break apart the chorizo sausage into smaller pieces and add them evenly around the sheet pan on top of the veggies.

Place in a 400 degree oven for 15 to 18 minutes. Toss a few times.

Add the garlic and shrimp to the baking sheet. Use tongs to carefully toss together. Sprinkle a little more fajita or taco seasoning over top. Place back into the 400 degree oven for 6 to 8 minutes.

Serve with flour tortillas and optional toppings such as lettuce, cheese, sour cream, hot sauce, lime wedges, etc. if desired.
Note: For a low carb option, serve over lettuce for a fajita salad with toppings of choice.
