Blackstone Chicken Pesto Quesadillas
Blackstone Chicken Pesto Quesadillas are just one of my most recent, insanely delicious recipes for the griddle!
Quesadillas on the griddle just make life easier.
In a skillet these would take forever to make one…at…a…time….
Ain’t nobody got time for that 😉
Thanks to the large griddle cooking space, you can make many quesadillas at once that are ready in minutes.
How to make Blackstone Chicken Pesto Quesadillas
This recipe uses my Simple Shredded Meal Prep Chicken.
I make it most weeks to keep on hand to use in recipes… huge time saver!
The rest of the ingredients were tortillas, cheese, and store bought pesto (or use my Homemade Basil Pesto recipe).
Sun dried tomatoes would be another great addition!
Any time I am cooking on my griddle or flat top grill I like to bring everything outside on a tray.
First preheat the Blackstone griddle or flat top grill to medium heat for several minutes.
Then add some cooking oil of choice and 2 large burrito size tortillas.
And to one side of each tortilla add some cheese and chicken first.
I am using a mix of mozzarella and goat cheese.
Then some pesto over the chicken and cheese.
More mozzarella cheese and then fold each quesadilla closed.
And cook a minute or two per side.
The quesadillas are done once the cheese is melty and the tortilla is crisped how you prefer.
Cut Blackstone Chicken Pesto Quesadillas and serve with pizza sauce for dipping 🙂
This recipe only makes two quesadillas, but it can easily be doubled or tripled if feeding a crowd.

Blackstone Chicken Pesto Quesadillas
Blackstone Chicken Pesto Quesadillas, a super easy dinner recipe for the griddle that is so good dipped in pizza sauce!
Ingredients
- cooking oil of choice
- 2 large burrito size flour tortillas
- 2 cups shredded mozzarella cheese
- 2 ounces goat cheese crumbles (optional)
- 2 ounces sun dried tomatoes (optional)
- 1 cup cooked, shredded chicken
- 4 ounces pesto
- pizza sauce for dipping
Instructions

Bring all ingredients (except for the pizza sauce) to the griddle and preheat to medium for several minutes.

Add some cooking oil of choice and lay the large tortillas flat over the oil.

To one side of each tortilla add some mozzarella cheese, goat cheese and sun dried tomatoes (if using), chicken, pesto, and more mozzarella cheese.

Use your hibachi spatulas to fold the empty side of each tortilla over the filled side. Press them closed. Cook 1 to 2 minutes per side or until cheese is melted and tortillas are crisped how you like them.

Cut the quesadillas and serve with pizza sauce for dipping.
