
Air Fryer Chorizo Eggs Benedict
This is a slightly spicy Mexican version of an eggs benedict recipe with a green chile hollandaise to top Air Fryer Chorizo Eggs Benedict!
It’s a fairly simple eggs benedict recipe designed for the average home cook (like me!).
And I have SO many more Easy Air Fryer Recipes to try!
Poaching eggs seems awfully “chef-y” to me, so I am making mine in the air fryer.
Feel fee to poach your eggs if you’d like, but still follow this delicious brunch or breakfast recipe (or my fave, breakfast-for-dinner).

How to Make Air Fryer Chorizo Eggs Benedict
First cook a pound of chorizo sausage in a skillet over medium heat.
Break the sausage apart as it cooks for 5 to 6 minutes.
Next let’s make the green chile hollandaise sauce.
Start by separating 4 egg yolks, and place the yolks in a food processor.

Add 2 tablespoons lemon juice, kosher salt, pepper, and chili powder.
Blend this for just under a minute.
You’ll see it transform to a lighter yellow color as it blends.
Then blend as you very slowly drizzle in a stick of hot, melted butter for about a minute or so.
The hot butter is what will cook the egg yolks.
Finally stir in 2 ounces of canned green chiles.

Now comes the magical part of air fried “poached” eggs!
Get 4 bowls or ramekins that are heat safe for the air fryer.
And spray each with a good amount of non stick spray.

Add a tablespoon of water to each bowl and crack an egg in each.
Place the bowls in the air fryer basket.
Set the air fryer to 370 degrees for 6 to 9 minutes, depending on how you want the yolks cooked.

Once the eggs are cooked how you like, carefully remove them as they will be very hot.
I did two batches of these for 8 eggs total.

As the eggs cool, place some English muffins in the air fryer for a minute to toast them.

Now we get to assemble this stunning dish!
Start with an English muffin topped with the cooked chorizo sausage.
Add some slices of avocado too if you prefer!

Then top with the air fried “poached” eggs.

Who knew THIS gorgeousness was made from just a little, old home cook like me… am I right?!
A little dusting of chili powder and chopped cilantro makes this a 5-star restaurant worthy dish in my opinion 🙂

Air Fryer Chorizo Eggs Benedict
Air Fryer Chorizo Eggs Benedict is a Mexican eggs benedict recipe with spicy sausage, air fried "poached" eggs and green chile hollandaise
Ingredients
Green Chile Hollandaise Sauce
- 4 egg yolks at room temperature
- 2 tablespoons lemon juice
- kosher salt, pepper, chili powder
- 1 stick hot melted butter
- 2 ounces diced green chiles (I used half of a 4 ounce can)
Air Fryer Chorizo Eggs Benedict
- 1 pound ground chorizo sausage
- non stick cooking spray
- 8 tablespoons water
- 8 eggs
- 4 English muffins (cut in half, 8 halves total)
- Optional: avocado slices, cilantro, hot sauce
Instructions
Green Chile Hollandaise Sauce

Put the egg yolks, lemon juice, kosher salt, pepper, and chili powder in a food processor. Blend for just under a minute.

Very slowly drizzle in the hot melted butter as the food processor is on, about a minute total or until it has a slightly thick, sauce like consistency. Stir in the green chiles.

Set the sauce aside while you make the eggs benedict.
Air Fryer Chorizo Eggs Benedict

Set a skillet over medium heat. Add the ground chorizo and cook 5 to 6 minutes, breaking it apart with a spatula as it cooks.

Spray non stick cooking spray and a tablespoon of water into small glass bowls or ramekins (make sure dish is air fryer safe). While the chorizo is cooking, crack an egg into each dish.
Note: This may need to be done in two batches.

Place them in the air fryer, set the air fryer to 370 degrees for 6 to 9 minutes depending how you like the egg yolks cooked. Carefully remove the dishes with the eggs, they will be hot.

Put the English muffin halves in the air fryer basket, cut side up. Set the air fryer to 370 degrees for a minute or two, or until toasted how you like.

Assemble each one on a plate with an English muffin on the bottom, avocado slices (if using), some chorizo sausage, a "poached" egg, and spoon some of the green chile hollandaise over top. Serve with chili powder over top and with cilantro and hot sauce if desired.
