Salmon Tacos with Pineapple Slaw has sweet Thai chili glazed salmon served in tortillas and topped with a gorgeous pineapple slaw

Ingredients
  • 1 pound salmon
  • 1/4 cup sweet Thai chili sauce
  • kosher salt, pepper
  • 2 cups slaw
  • 1 cup chopped cilantro
  • 1 cup diced pineapple
  • 2 to 3 Tbsps ranch dressing
  • 8 fajita size flour tortillas
  • Optional toppings: hot sauce, jalapeno, more sweet Thai chili sauce
Instructions
  1. Brush half of the sweet Thai chili sauce on the salmon and season the salmon with kosher salt and pepper.

  2. Cook the salmon according to one of these methods:

    Oven: Place the salmon on a baking sheet and bake at 400 degrees for 12 to 14 minutes.

    Air Fryer: Put the salmon in the air fryer basket and set it to 400 degrees for 12 to 14 minutes,

  3. While the salmon cooks, make the pineapple slaw by combining the slaw, cilantro, diced pineapple, ranch dressing, kosher salt, and pepper in a bowl. Toss until evenly combined.

  4. Assemble the tacos by adding some flaked salmon to the flour tortillas and top with the pineapple slaw. Add other toppings such as hot sauce, jalapeno, and more of the sweet Thai chili sauce if desired.
