Cheesy Cuban Casserole
Cheesy Cuban Casserole has everything you’d typically find in a Cuban sandwich, only in a one pan casserole recipe.
So a Cuban sandwich has pork, ham, swiss, pickles, mustard all pressed between Cuban bread.
For the pork I planned ahead and made a big Slow Cooker Garlic Stuffed Pork Loin for dinner one night and used the leftovers for this casserole.
I didn’t think putting the pickles in the dish would be very good, so I served pickled on the side for those that wanted that full Cuban experience.
How to Make Cheesy Cuban Casserole
You’ll need 4 cups shredded pork, a half pound each ham and swiss from the deli, dijon mustard, cream of chicken soup, and sour cream for the casserole part.
The cracker topping (that is like the “bread” part in the Cuban sandwich) is Ritz crackers and butter.
Dice the ham and cheese.
And put them in a bowl with the pork, sour cream, cream of chicken, and some kosher salt and pepper.
Mix everything together until it is evenly combined.
And place in a greased 9×13 casserole dish.
Press down slightly so it’s even.
Place 45 buttery crackers, like Ritz, in a gallon size plastic bag.
And use a rolling pin to crush them.
My son wanted to help with this part 🙂
It was the perfect job for him.
Pour 2 Tablespoons melted butter in the bag with the crackers and shake.
Then put the cracker topping over top and spread evenly.
Bake this in a 400 degree oven for 25 to 30 minutes.
It’s all cooked so we just need to get it warm and melty, and brown the cracker topping.
Serve Cheesy Cuban Casserole with pickles on the side if desired 🙂
