A simple and light side dish with garden fresh zucchini.

Ingredients
  • 2 zucchinis
  • olive oil, kosher salt, pepper
  • 2 Tbsps grated parmesan cheese
  • Optional: Ranch dressing
Instructions
  1. Slice each zucchini lengthwise into 1/4 inch strips. Each zucchini should make 4-5 strips.

  2. Brush each strip on both sides with olive oil, sprinkle with kosher salt, pepper, and parmesan cheese. Press the cheese into the zucchini slightly with fingers.

  3. Grill over medium high heat for 3 minutes per side. Use a grill spatula to flip them as they will stick slightly.

    Note: If using a Traeger Grill set to 450 degrees and cook 5 minutes per side.

  4. Serve with more parmesan cheese over top, or ranch dressing if desired.
