BLT Salad
BLT sandwiches are one of life’s simple little pleasures, especially end of summer when the tomatoes are fresh. Giving a BLT Salad recipe a whirl sounded like a pretty good idea too.
You have to use toasted white bread, crispy fried bacon, crunchy lettuce, mayo, and kosher salt and fresh cracked pepper on the tomato slices.
Well, this salad has all the joys of that simplistic BLT sandwich.
My daughter always puts a fried egg on her BLT sandwiches, so I added hard boiled egg along with a little blue cheese.
Croutons are like the “bread” of the BLT Salad.
How to Make BLT Salad
Start with any mix of green and veggies that you like.
My go-to is romaine lettuce, shredded carrots, cilantro, and red cabbage.
Start with your salad mix and keep adding your toppings.
I always start with too much mix and by the time I’m done with the toppings it’s doubled in size and I’m like, no way I can eat all this.
But, I usually do 🙂
I dress it with my easy, homemade Healthy Ranch Dressing.
BLT Salad is so freakin’ good!
And if there’s any way to get a husband excited about salad for dinner, just tell him it’s topped with BACON!
.
You can also meal prep this yummy BLT Salad!
If you’re not feeding four people (or if you decide to make more than you need, which I often do just to have extras for meal prep) make a few ready to go meals.
Always nice to have these on hand for lunch or busy evenings.
