Shrimp Cobb Salad

I love a good cobb salad recipe, so I decided to splurge a little and treat myself to a Shrimp Cobb Salad.

When Lent is right around the corner, the grocery stores usually have amazing deals on seafood.

So I stock up and make more seafood recipes of course.

How to make Shrimp Cobb Salad

This gorgeous pound of jumbo shrimp will be the star of this salad.

I seasoned it with with Old Bay seasoning and some garlic paste.

Then tossed it together with olive oil.

This is the garlic paste that is my best kitchen friend.

When I don’t feel like chopping garlic, I use this!

It’s easily found in the produce section by the fresh herbs and stays fresh in the fridge.

Old Bay Shrimp

I decided to make my shrimp in the air fryer because it’s SO easy and they come out perfectly cooked every time.

You could also cook them in a skillet over medium heat for a few minutes.

Before assembling these gorgeous salads, you do need to do some prep work.

This was a weeknight meal for us, so on the weekend I fried up some bacon.

Then crumbled it and kept it in the fridge.

And also hard boiled my eggs.

So when I made our Shrimp Cobb Salads lots of the prep work was already done.

On a bed of iceberg lettuce (or lettuce of choice) place the shrimp, bacon, hard boiled egg, tomatoes, blue cheese crumbles, and avocado.

Serve with ranch dressing and enjoy!

A little trick I use often is making more than I know we will eat so I can meal prep a few salads!

You can included everything except the avocado, which would turn brown.

Shrimp Cobb Salad

Shrimp Cobb Salad starts with delicious, flavorful shrimp cooked in the air fryer or skillet, served on lettuce with all the traditional cobb salad toppings

Ingredients

  • 1 pound jumbo shrimp peeled and deveined
  • 1 Tbsp olive oil
  • 1 Tbsp Old Bay seasoning
  • 1/2 Tbsp garlic paste or fresh minced garlic
  • 1 head iceberg lettuce chopped
  • 8 slices bacon cooked and crumbled
  • 2 eggs hard boiled, peeled, and diced
  • 1 pint grape tomatoes cut in half
  • 4 oz blue cheese crumbles
  • 1 avocado diced
  • 8 oz ranch dressing

Instructions

  1. Pat the shrimp dry with paper towels and put them in a bowl. Add the olive oil, Old Bay seasoning, and garlic. Toss until evenly mixed.

  2. Cook the shrimp according to one of these methods:

    Air Fryer: Place them in a single layer in the air fryer basket. Set the air fryer to 390 for 8 to 10 minutes.

    Stove: Set a skillet over medium heat. Add the shrimp in a single layer, cook 2 minutes and flip the shrimp, cook 2 to 3 more minutes.

  3. While the shrimp cool, assemble the salads. Divide the lettuce evenly between 4 bowls or containers (if meal prepping). Top each salad evenly with the bacon, egg, tomatoes, blue cheese crumbles, avocado, and shrimp.

  4. Serve the salads with ranch dressing.
