I’ve got a pretty quick and easy meal plan for you this week. One super easy trick I have for making weeknight dinners go a bit more smoothly is prepping as much as possible on the weekend. Or whenever you have a little extra time.
Baking chicken and shredding it up to use in two of our meals this week is going to be our first step this week. Just knowing that most of the work is already done for a weeknight dinner saves just a little of my sanity (well, the little that I have left anyway 😉 ).

If the chicken is already cooked and shredded, this one takes maybe five minutes to prepare. And if you do follow my weekly meal plans, you already have the Everything Bagel seasoning leftover from the Everything Bagel Chicken Tenders last week.
This is a fun twist on regular taco night, and who doesn’t love chicken, bacon, and ranch?!
Another great idea with this meal is making Chicken Bacon Ranch Meal Prep Salads with the extra ingredients for lunches or an easy meal on the go.
This three ingredient meal is easy, healthy, and delicious! My kids do like feta cheese, but if yours don’t simply leave it off.
So now that you’ve gotten through the quick and easy weeknight meals, it’s time for the weekend recipe where you can relax and enjoy making this chili. Hey, you could even double the recipe and freeze the extras!
Soup or chili making for me is my favorite…chopping up all of the ingredients and combining them into one pot of pure yumminess that will simmer away on the stove all day.
